Chicken and Potato Cutlets

These are a quick fix kind of kabab/cutlet which tastes amazing on its own or in a wrap. A perfect starter to any meal, can be served with ketchup or any spicy dip/chutney.
Servings 12 Cutlets

Ingredients
  

  • 250 gm chicken breast cubed and boiled
  • 3 medium potatoes boiled and mashed
  • 1 small onion chopped finely
  • 1 tsp. oil or butter
  • 3 tbsp. chopped coriander
  • 1 tbsp. chopped mint optional
  • 2 green chillies chopped
  • 1 tsp. ginger paste
  • 1/2 tsp. garlic paste
  • 1/2 tsp. salt or to taste
  • 1/2 tsp. cumin powder
  • 1/2 tsp. red chilli powder
  • 1/2 tsp. red chilli flakes for extra spice, optional
  • 1/2 tsp. black pepper powder
  • juice of half a lemon
  • 1 egg for coating
  • breadcrumbs for coating
  • oil for frying

Instructions
 

  • Boil the chicken cubes and then shred. Set aside.
    Heat the 1 tsp oil or butter in a pan and then saute/fry the onions until they are soft but NOT golden. We just need to sweat them slightly. Add the ginger and garlic pastes, stir them in for a few seconds then turn off the heat. Allow the mixture to cool slightly.
    Put the mashed potatoes in a bowl, add the shredded chicken, softened onions/garlic/ginger mixture, coriander, mint, chillies, salt, lemon and all the remaining spices. Mix everything well and give it a taste. Adjust salt/spice or lemon if needed.
    Shape round flattened patties out of the mixture. Dip each one in some beaten egg then in breadcrumbs. Shallow fry on both sides until golden and crispy.
    Drain onto kitchen towels and serve with a dip and some lemon/lime slices.

Notes

You can omit the breadcrumbs, I normally prefer adding that layer for a nice crunchy crust.

      Just boil it then shred it apart into little pieces with clean fingers or even with a fork.

    1. The potatoes ARE cooked, they
      The potatoes ARE cooked, they should be boiled before you used them. I personally never like to freeze any food that has potatoes in it, they tend to release a lot of moisture when thawing and can end up absorbing too much oil or scattering in the oil. But if you ABSOLUTELY need to freeze, then make sure you fry them directly from the freezer into the hot oil.

      No, the chicken cubes are boiled with salt, ginger, garlic and pepper before you begin making this dish. Then you just shred and add to the other ingredients as directed in the recipe instructions. 🙂

I got married and always come to your website to search for what to cook 🙂 i wanted to confirm , i know you answered this befpre but just to make sure i am not confused.. For chicken mince.. Do i just fry it with ginger garlic salt and pepper to cook it OR do i need to boil it in water with gi ger garlic salt and pepper?       Hi, thank you for the lovely message. Just fry the mince with ginger, garlic, salt and pepper without the addition of water. Mince usually releases its own juices as it cooks and it is supposed to dry up completely.

So this step which you have mentioned in the above comment (frying the chicken mince with ginger, garlic, salt n pepper) – is it done BEFORE frying the onions with the ginger-garlic pastes, or is it done ALONG with the onions and ginger-garlic pastes?

        And if it is done BEFORE, then what would be the quantities of the ginger, garlic, salt n pepper?

          Hi, you could cook it along with the onions and garlic paste as mince won’t take long to cook through. If you prefer to dry it off first, then just use about a quarter tsp each of the ingredients you mentioned.
