Lamb Koftas

These moist, succulent and super flavourful koftas are very easy to prepare.  They work well as appetisers or as an accompaniment to rice, pita bread or a salad.
Servings 16 Koftas

Ingredients
  

  • 500 gm lamb mince
  • 1 medium onion roughly chopped
  • 1 green chilli
  • 1 tsp. cumin powder
  • 1 tsp. coriander powder
  • 1 tsp. salt
  • 1/2 tsp. black pepper powder
  • 1/2 tsp. turmeric powder
  • 1/4 tsp. garam masala or allspice powder
  • 1/2 tsp. garlic paste
  • 1/2 tsp. ginger paste
  • 2 tbsp. chopped coriander
  • 1 tbsp. chopped mint optional
  • 1/2 an egg lightly beaten
  • 2 tbsp. breadcrumbs

Instructions
 

  • In a food processor, grind the onion with the green chilli and 1 tbsp. chopped coriander.  Add the mince and pulse it a few times to combine. Turn the mince out into a bowl and add all the remaining ingredients.  Mix well, then cover and refrigerate for about 30 minutes or up to 12 hours.
    Divide the mixture into about 16 portions and shape each one into a small ball.  Avoid over pressing when shaping as this will harden the koftas, use a light hand.
    The koftas will be easier to shape if you wet your hands.
    Lightly oil a preferably non-stick pan with about 1 tbsp. of oil, then gently drop half the koftas on it and allow them to cook, making sure to turn them over so that both sides are cooked evenly. They will need a total of about 6-8 minutes to cook.  Remove them on to a plate, add another tbsp of oil in the pan then fry the remaining 8 koftas the same way as the first batch.
    When done, put them on skewers for a prettier appearance, brush them with a touch of melted butter to keep them moist and serve over pita bread and a salad or with saffron rice or couscous and some mint raita.

      Am sorry but I do not know what part of the lamb is best for mince. I just ask for lamb mince in general.

    Words cannot describe how perfect these koftas turned out. So flavorful, unbelievably tender. We made sandwiches with naan, thoom and salad. I used ground turkey and turned out great–but can’t wait to make again using lamb! Thank you!
