Nutty Fruity Chewy Cornflake Cookies
These are my darling hubby’s favourite cookies so I make them fairly often and the cookie jar is always wiped clean in no time. Nutty Fruity Chewy Cornflake Cookies!
Servings 3 Dozen
Ingredients
- 1 cup brown sugar
- 1/2 cup margarine or butter at room temperature (I prefer butter)
- 1 cup crushed nuts I used wholenuts, almonds and pistachios but you can use any
- 1/2 cup dates deseeded and chopped into small pieces
- 2 cups cornflakes crushed
- 2 eggs
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 1/2 cups flour
Instructions
- Cream the butter and brown sugar until light and fluffy. Add the eggs one at a time and beat well. Add the vanilla and mix. Then, fold in with a wooden spoon the dry ingredients a little at a time until well incorporated.Drop the cookie dough by the teaspoon onto a greased or lined tray leaving space around the cookies. Flatten the cookies slightly by pressing them with your finger. Bake at 170 C for 10-12 mins. Cool on a rack and store in an airtight container.
I am just trying ur nutty biscuits now…but they seem soft is it like that or it will harden after sometime?
They are normally chewy not crispy, if you want them harder you can bake them longer.
How many eggs? Also, how many cookies can this make?
Eggs are mentioned in the recipe and so is the number of cookies. 🙂

Asalamualaikam Fauzia hope you’re in the best of health 🙂 I wanted to ask whether you could use the same measuring jug which has ‘cup’ measurements for all ingredients like flour, sugar, dates etc… Or is the measuring jug used only for liquids? Thank you x

W/Salaam, normally I try to maintain different measuring cups for dry ingredients than for liquid. But just confirm if the 1 cup on the jug when measuring sugar yields 200gm of sugar. If it does then it is accurate.
