Tomato Soup

Simple and delicious, nothing says comfort more than a bowl of home-made tomato soup. And on the plus side, it is a very very healthy dish to include in one’s meals!
Servings 2 people

Ingredients
  

  • 5-6 medium tomatoes the ripest/plumpest you can find
  • 1 carrot peeled and grated
  • 1 onion chopped
  • 1 tbsp butter
  • 1 tbsp oil
  • 1/4 tsp garlic paste
  • salt/pepper to taste
  • 2 tsp sugar
  • 1/2 tsp oregano
  • 1 tbsp chopped coriander leaves
  • 1 chilli
  • 2 cups chicken broth
  • 2 tbsp cream OR milk

Instructions
 

  • Chop the tomatoes with their skins and set aside.
    Melt the butter with the oil, then add the onions and fry until aromatic. Add the garlic paste and black pepper powder. Stir together then add the grated carrot and chopped tomatoes, plus the red chili. Cook together until the tomatoes soften and excess moisture has evaporated. Add the broth, salt and coriander leaves.
    Reduce the heat, cover the pot and let the soup simmer for about 10 minutes. Give it a stir occasionally.
    Add the oregano and stir it in. Turn off the heat, then blend the mixture until smooth. You can use a hand blender or let the soup cool and use a regular jug blender.
    Once pureed, return the soup back into the pot and add the sugar. Simmer and adjust consistency to your preference. Finally add the cream or milk and adjust salt/pepper. Give it a final stir and taste. Turn off the heat and serve hot!

    1. Chicken soup, either boil chicken with salt, pepper, ginger and garlic then drain the soup to use in the recipe OR you can dissolve a chicken cube in warm water and use.

    Asalaam’alaykum, you mention “1 chilli” in the ingredients and in the instructions it says ” plus the red chilli” so i’m confused, do you mean 1 red chilli, or 1 tsp chilli powder? FYI I’ve made this a few times now and add 1 green chilli (not chopped) and a pinch of turmeric powder, it’s absolutely yum. JazakiAllah khayr for the recipe 🙂 x

      Actually I use a red chilli (not the powder) just to make sure the soup remains vividly red lol, sorry about the confusion. But any chilli would do, and thanks for the lovely feedback!

  4. Salaam. I have made this soup
    Salaam. I have made this soup few times and all the time its a hit. Only one things I’m disappointed with the result is that, I never get a a vivid red color as yours in the pic. I use tin tomatoes and i think they give better color than fresh tomatoes. Please advice how can I get red color as yours? Jazakallah

    1. W/Salaam, the colour could be
      W/Salaam, the colour could be more from the lighting than anything else. You could add a bit of tomato paste/puree or even a little bit of food colouring to enhance the colour, but as long as the taste is good then the colour is not as important. 🙂

  5. I love tomato soup!! Can’t wait to try this recipe. But in general apart from garlic bread or bread, what other side dish would be a good accompaniment with soup? Cause men don’t get filled only with soup. Please help. Thank you ☺️

    1. Have you tried serving it with grilled cheese or as a starter to the main meal?
