- 1 cup brown sugar
- 1/2 cup margarine or butter at room temperature (I prefer butter)
- 1 cup crushed nuts I used wholenuts, almonds and pistachios but you can use any
- 1/2 cup dates deseeded and chopped into small pieces
- 2 cups cornflakes crushed
- 2 eggs
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 1/2 cups flour
Cream the butter and brown sugar until light and fluffy. Add the eggs one at a time and beat well. Add the vanilla and mix. Then, fold in with a wooden spoon the dry ingredients a little at a time until well incorporated.Drop the cookie dough by the teaspoon onto a greased or lined tray leaving space around the cookies. Flatten the cookies slightly by pressing them with your finger. Bake at 170 C for 10-12 mins. Cool on a rack and store in an airtight container.
