Chocolate Yoghurt Cake

The most perfectly delicious and moist-est cake I have ever baked!! I got the recipe from an awesome friend, made some alterations to it and this is the outcome! Perfectly chocolatey without being too heavy, moist and soft unlike other yoghurt cake recipes which tend to mostly turn out rather dense or heavy. This one was light and fluffy and utterly yummilicious! The cake rose so well that I sliced it in half and sandwiched some chocolate ganache between the layers, which further enhanced an already perfect cake!

Ingredients
  

Ingredients for Cake

  • 1 cup sugar grinded to a powder (200gm)
  • 1/2 cup butter or margarine 112gm
  • 1 cup all-purpose/plain flour 120gm
  • 1/2 cup self-rising flour 60gm
  • 1/2 cup cocoa powder 60gm
  • 1 cup heavy thick yoghurt 200ml
  • 1/2 cup milk 100ml
  • 2 large eggs
  • 1 tsp. vanilla essence
  • 1 1/2 tsp. baking soda
  • 1/2 tsp. salt

Ingredients for Ganache

  • 1/2 cup whipping cream 100ml
  • 150 gm dark cooking chocolate chopped and at room temperature

Instructions
 

  • Pre-heat your oven at 175 C and grease/line an 8″ round pan.
    For the Cake
    Add the grinded sugar to the butter/margarine, and cream together until light and fluffy. Don’t rush past this stage, it is the one that will determine the texture of your final results, so do it for at least 7-10 minutes.
    Now add the eggs, one at a time, beating well after each addition, then add the vanilla essence. Add the yoghurt and milk and beat well, then remove the mixer/machine and take a wooden spoon. Add in the flour ingredients in two or three additions, folding it in after each addition. Do not over mix, just fold until everything is well incorporated.
    Pour into your pan and bake for about 30minutes or until a skewer inserted in the center comes out clean. Leave the cake in the pan for about 5 minutes, then turn it over on a wire rack to cool completely.
    For the Ganache
    For the ganache, I didn’t want it too thick because I wanted some of it to be absorbed into the cake.
    Heat the cream until it almost starts to boil around the edges. Remove from the heat and add in the chopped chocolate. Stir until smooth.
    Slice the cake in half, add half of the ganache to the center, place the second half of the cake and pour the rest over the top, letting it drip down the sides. Garnish if you want with nuts or chocolate flakes. I used pistachio flakes and sprinkled some crushed choc-chip cookies on top.

Notes

  1. Make sure everything is at room temperature when you start.
  2. Sift the flour with the self raising flour, cocoa, salt and baking soda two or three times just to aerate it, makes the cake very light and fluffy.
  3. If the yoghurt you are using is too watery, you can thicken it by pouring it into a cheesecloth/muslin cloth, and tie it in such a way that it can hang for a while, all the excess water will drain out and you will be left with a lovely thick yoghurt.

    1. Well this cake was made in an 8″ pan so a 9″ one is just ONE inch bigger, you can just bake the same recipe in the slightly bigger pan. The height of the cake will reduce slightly of course but I would not suggest adjusting the recipe for just one inch difference in the cake pan size.

  2. Can I use just self raising instead of mixing the two flours and adding baking soda? N does the sugar have to b grinded?

    1. No, please follow the recipe exactly for best results. SR flour has no baking soda in it, you will have completely different results if you alter the ingredients.

        1. For every cup of flour, add 1 1/2 tsp of baking powder and a pinch of salt. Sieve together and use.

  4. Hi fauzia, I made the cake it turned out really delicious thanks for the recipe but my ganache didn’t really work. I think I made a mistake with the cream. Is whipping cream same as double cream and single cream? I couldn’t find whipping cream at my supermarket, so I used single cream instead but it was very runny and didn’t look right.

    1. Hi, the mistake was using single cream. It is a lot lighter than whipping and double cream. That is why it was runny. Use either whipping cream or even double cream, but not single for making ganache.

    1. No cream added in this recipe. Creaming the butter and sugar means to mix the two until they resemble cream. It is a baking term.

    1. Because it gets cold in there, so the ingredients solidify. Just set it out for at least half an hour before serving, it will be fine.

    1. No cream is used dear. Creaming sugar and butter means to mix the two ingredients until they look like cream. It is a baking term.

    1. Hi, have never tried the recipe without eggs. However I do have an eggless cake recipe, have a look at that for a veg-version. 🙂

    just wanted to ask that the cream u used in this recipe is the one that is available in tetra packs? what is single and double cream?
    because here in America, only table cream is available which is not too thick.

W/Salaam, not sure what tetra pack cream is, single cream is lighter in consistency and fat content, it’s used mostly in cooking and for pouring, double cream is thicker and heavier, used for desserts mostly. I am sure they are all available in the states, check your local supermarket, refrigerated isles.

  14. Plain flour is maida, SR flour is maida with baking powder and salt added into it. 1 and half tsp baking powder and a pinch of salt in every cup of flour.

    1. W/Salaam, since I have no idea which country you are from, I cannot really know what brands or companies of yoghurt are available to you. ANY good fresh natural yoghurt will do. Something that is THICK not WATERY. Nothing special. 🙂

    1. Yes, use 3 eggs if they are small. Have not tried weighing the eggs, I just eye them and estimate. 🙂

    and as for yogurt , can i use the nestle yogurt? or shud i use the one we make at home? which one will give better results?

    1. Half cup SR flour you will need to use three-quarter tsp of baking powder and a small pinch of salt. Never used Nestle yoghurt so am not sure, as long as it is plain and unflavoured, thick in consistency, it will work.

    1. W/salaam, yes that is fine but you need to use THREE-QUARTER tsp of baking powder for half a cup of flour.

    1. W/Salaam, it has a unique excellent taste. Vanilla powder is strong so use just a quarter tsp or less.

  29. Am not sure how single dilute cream works but do try and check for any HEAVY cream for whipped cream. And What did you mean beating then boiling please? I never beat then boil cream! You can boil the cream with chocolate THEN beat it after it has completely cooled down.

    N I found powder whipping creme to add in milk n it says it will from thick one after beating well, I hope it will work.

    1. Maybe you know it as bicarbonate of soda. It should be very easily available at all supermarkets and even in some regular grocers.

  33. Baking soda is also known as bicarbonate of soda. It is white in colour but am not sure if it is also known as white soda.

I just baked the cake and forgot one of the most important ingredients- baking soda!!!!!! such a pity…. came out very dense and heavy…. getting stuck to the back of your mouth horrible feeling…. Got out ingredients again and baked another(yes I am obsessive like that!!!!!). Just thought that I should put my two sense worth and share my experience because so many people keep asking if the baking soda is a must. Oh yes it is. Thank you Fauzia.   37. W/Salaam, I use Millac Gold. Brands of whipping cream differ for every country so depends on where you are located, best to ask at your local supermarkets as to which brand is best where you are.

  38. It is actually known as self rising flour. You can make it at home though, for 1 cup of SR flour, simply add 1 and a half tsp baking powder and a pinch of salt to every cup of plain/all purpose flour, sieve together and use.

    1. W/Salaam. Normally coffee goes well with chocolate flavour so if you like you can add a little powder into the cocoa for this recipe.

    1. Thank you! For this recipe, butter would be the best option. I guess it is a matter of personal taste really, and also most quick-fix cakes (like my moist cake recipe) require oil as it makes it easier coz you get to skip the whole ‘creaming butter with sugar’ step. 🙂

    1. Best to use a mixer especially during the creaming of butter and sugar to get a good fluffy result.

Can’t wait to try it, I just have a question about the sugar, is the 1st ingredient (1 c sugar ground to a powder) the same as powdered sugar, also known as icing sugar? Can I use store-bought powdered sugar (which also contains a bit of corn starch/corn flour)or would it be best to grind regular sugar to a powder? Jak I appreciate the feedback!!!

    1. W/Salaam, best to grind the sugar to a powder. The cornstarch in icing sugar might give you different results.

    1. Hi! Since am not from Bangladesh (nor have I ever been) I wouldn’t know what brands are available. It is the normal plain white not very sour fresh yoghurt.

      W/Salaam, yes you can double the ingredients OR make two cakes. If you double the ingredients the cake will take longer to bake depending on the size/depth of the pan used unless you split the batter into two pans.

      W/Salaam, the measurements are ALL accurate. A cup of sugar is heavier than a cup of flour. Like when you have a bag of stones and a bag of feathers, they will not be the same weight even if the bag is the same size, got me?

      W/Salaam, if you use good quality and FRESH baking soda there should be totally no smell or taste at all. It is only when the baking soda is old or of an inferior quality that it gives a weird smell.

      With this recipe I use the creaming method whereby the butter is whipped with the sugar. It needs a soft butter for proper creaming, oil will give a completely different texture. Why don’t you make the moist chocolate cake which uses oil instead of butter? 🙂 Otherwise you can try this with oil but am not sure how the results will be.

      W/Salaam, no the baking soda is needed in this recipe and it is completely different from baking powder. And yes you can make the SR flour by adding 3/4 tsp baking powder in half a cup of flour.

      W/Salaam, yes sugar-free yoghurt, and yes big eggs. Baking soda is also known as bicarbonate of soda. It is a white powder which LOOKS like baking powder but works differently.

      Did you mean you want to substitute the butter for oil? If so then I would not recommend it as it may alter the flavour of this cake. You could use my moist chocolate cake recipe instead which requires oil instead of butter.

I never tasted a homemade chocolate cake that has such a Nice chocolate taste! It worth the hours I took to make it as I am really slow at cooking. It was so soft! I add chocolate buttercream instead of the ganache as I didnt have chocolate. Even when I keep it in the fridge, it became more firm so easier to cut and still so good or even more better!     1. For every cup of flour, add 1
      For every cup of flour, add 1 and a half tsp of baking powder and a pinch of salt. Sieve together and use.

      I personally have never worked with fondant so am not sure if this will be ok, it should be fine though as it is quite a solid cake in spite of being moist.

    Alhamdulillah I tried this recipe and it came out well especially the texture -jazakallah khairah- but I have some doubts. I used the rice measuring cup for measuring the ingredients but when i measured it in grams, it differed greatly. for example i took 1 cup of flour and measured it in grams and it was 90 grams- not 120. I didn’t know what to do, so i preferred the cup measurement and used that instead of weighing in grams…
    I don’t know whether this would have been the cause for the odd taste in the cake but the texture was really awesome….
    secondly, i want to know whether ganache is a part of the recipe or optional? coz when i ate the cake without the icing, it didn’t taste sweet…..

      W/Salaam, measuring cups vary so much in size, but the standard 1 cup of flour is around 120g not 90g so I would check for a better set just to get accuracy in your baking results. The ganache really does make this recipe, I would strongly recommend including it. 🙂

  83. Made it twice, the first time I didn’t have chocolate for the ganache but it was really good. The second time, I made the ganache also and it was amazing, chocolaty and moist without being too sugary. I’m making it for the third time today, in Shaa Allah it will be good as usual. Your explanation are really helpful.
