Marinara Sauce

This is a tomato based sauce that can be used on pasta or as a dip for cheesy sandwiches. It is a really simple yet flavourful sauce, that can be prepared in advance then refrigerated or frozen until needed.
Servings 4 Cups

Ingredients
  

  • 8-10 medium tomatoes ripe
  • 3 tbsp. tomato puree/paste
  • 1 tbsp. brown sugar
  • 2-3 red chillies
  • 1 onion chopped
  • 2 cloves garlic grated or finely minced
  • 1 tsp. salt or to taste
  • 1 tsp. dried oregano
  • 4 tbsp. chopped coriander
  • 4-5 tbsp. olive or vegetable oil
  • 1/2 tsp. black pepper powder

Instructions
 

  • Roughly chop the tomatoes and blend them along with the coriander and chillies. Set aside.
    In a pan, heat the oil, then add the onions and fry until soft. Then add the garlic and tomato paste/puree. Stir until the oil colours slightly, then add the blended tomatoes mixture. Also add the salt, pepper, oregano and sugar. Lower the heat and allow the sauce to gently simmer for 30 minutes. Taste and adjust seasoning to your taste. Done!

Notes

The flavours of this sauce tend to develop, so make the sauce a day before you need to use it for best results.

      Hi, use white sugar if you do not have brown. Gur has a distinctive flavour that might change the taste of this sauce.
