- 8-10 medium tomatoes ripe
- 3 tbsp. tomato puree/paste
- 1 tbsp. brown sugar
- 2-3 red chillies
- 1 onion chopped
- 2 cloves garlic grated or finely minced
- 1 tsp. salt or to taste
- 1 tsp. dried oregano
- 4 tbsp. chopped coriander
- 4-5 tbsp. olive or vegetable oil
- 1/2 tsp. black pepper powder
Roughly chop the tomatoes and blend them along with the coriander and chillies. Set aside.In a pan, heat the oil, then add the onions and fry until soft. Then add the garlic and tomato paste/puree. Stir until the oil colours slightly, then add the blended tomatoes mixture. Also add the salt, pepper, oregano and sugar. Lower the heat and allow the sauce to gently simmer for 30 minutes. Taste and adjust seasoning to your taste. Done!Enjoy!
