Cajun Chicken

Cajun style grilled chicken steaks are easy to prepare and intensely flavourful.  Once you have prepared a batch of Cajun seasoning, whipping these up for salads, sandwiches, dinner, etc. will become a breeze.  I love serving this chicken steak with a side of bean fried rice and some mango salsa.  But it goes beautifully with any salad, rice, fries and so on.

Ingredients
  

Ingredients for Cajun Seasoning

  • 1 tsp. salt
  • 2 tsp. garlic powder
  • 2 1/2 tsp. paprika powder
  • 1 tsp. black pepper powder
  • 1 tsp. onion powder
  • 1 tsp. cayenne powder or red chilli powder
  • 1 tsp. dried oregano
  • 1 tsp. dried thyme
  • 1/2 tsp. crushed dried red chillies
  • 1/2 tsp. cumin powder

Ingredients for Cajun Chicken

  • 2 single chicken breasts
  • 2 tbsp. oil
  • 1 tbsp. cajun seasoning
  • 1/2 tsp. freshly grated ginger
  • 1 small red onion roughly sliced
  • juice of 1/2 a lemon

Instructions
 

  • First prepare the Cajun Seasoning by mixing all the cajun seasoning ingredients together.  The recipe makes about 4 tbsp. of seasoning.  Store the remaining seasoning in an airtight container to be used for future steaks or for making Jambalaya (recipe HERE).
    Next, clean the chicken breasts and pound each one slightly to even out the thickness.  It should be about 1/2 an inch thick.  Marinate the chicken breasts with oil, lemon juice, ginger, onion slices and 1 tbsp. of cajun seasoning for at least 30 minutes or up to overnight.
    When ready to cook the chicken, make sure you take them out of the fridge at least half an hour before so they come to room temperature.
    Then you can either grill the chicken steaks on a hot BBQ grill on both sides until done (about 8 minutes per side)
    OR
    Heat a hot steak pan or heavy griddle, add 1 tbsp. of oil to it and fry the steaks on medium heat for about 6 minutes per side.  Then increase the heat and give it a final fry of about 2 minutes per side or until it begins to slightly char.  If you are making a large batch, do not crowd the pan, fry a few pieces at a time.
    If you like, you can cook the sliced onions and the remaining marinade until the onions are caramelised and serve over the steak.  Otherwise simply discard the remaining marinade.
    Serve the cajun chicken with the bean fried rice and mango salsa, or any accompaniments of your choice.

      Hi, thank you! It is such a tiny amount of thyme that it will not really be that vivid in the dish itself, however you can choose to omit it completely and stick with just the oregano. It still will be awesome. 🙂

    Salam Fauzia. For the cajun seasoning, is onion powder absolutely necessary or can it be omitted without altering the taste?

  3. Can I use this recipe with cubed chicken. I went to make it into to realise I don’t have full breasts 🙁
