Baked Gola Kababs

Baked Gola Kebabs, with a side of boiled spiced potato cubes, a bowl of minty raita/yoghurt dip and some pita bread.
Gola Kebabs are popular in India and Pakistan. The word 'Gola', loosely translated, means round…referring to the shape of the yummy kebabs. (I googled the definition!)

Ingredients
  

  • 500 gm beef or mutton mince preferably grinded 2-3 times at the butchery but without any fat
  • 1/4 tsp. nutmeg
  • 1 tsp. salt
  • 1 egg
  • 3 tbsp. yoghurt
  • 2 tbsp. grated raw pawpaw
  • 2 tsp. chilli powder
  • 1/2 tsp. turmeric
  • 1/2 tsp. black pepper
  • 1 tsp. crushed cumin optional, I always add
  • bunch of chopped coriander
  • 2 tbsp. oil
  • 1 tsp. garlic paste
  • 2 tsp. ginger paste
  • 1/2 tsp. cardamom powder
  • 2 tbsp. of fried onions crushed

Instructions
 

  • Mix everything together thoroughly, then using a coal, smoke the mixture for 5 minutes. Then cover and refrigerate for a few hours to develop the flavor and for the mixture to get marinated well.
    Shape into balls, you will get about 24-25 balls. Grease a tray and pre-heat your oven to 200-220 C. Bake for 10mins, then remove tray and turn the kababs over and bake again for another 10-12 minutes until they are a nice color. Do not over-bake otherwise they will get hard, these are supposed to be yummy and tender.
    Serve hot and enjoy!

    1. You can leave it out if you don’t have it. It adds softness to the texture, but it is the best thing to use, no alternative will give the same result.

  2. my kababs just where too delicate and broke apart when i turned them over,the others which i dint turn also broke when i removed them

    You have no idea how many times your recipes have saved the day for me. Every time I am stuck for what to make my 10 year old quickly types fauziaskitchenfun and voila! Thank you may Allah bless you. I wanted to ask if we can freeze these goal kebabs? If yes how? Before or after baking? I have a huge party in 10 days and I want to be as prepared beforehand as possible. Thanks.

      W/Salaam, thank you so much! You can cook them completely and then pack them up and freeze until needed. Simply warm them in the microwave or a lightly oiled pan before serving.
