Tuna Pasta

A very simple meal that takes literally minutes to put together yet tastes incredible.
Servings 2 people

Ingredients

  • 200 gm tube pasta of any kind
  • 1 can of Tuna drained (approximately 100 gm)
  • 2-3 fresh tomatoes chopped into small pieces
  • 1 tbsp tomato sauce/ketchup
  • 1 small onion finely chopped
  • 1 green chilli chopped
  • 1 tbsp oil
  • 1/4 cup water optional
  • 1/4 tsp garlic paste
  • 1/4 tsp ginger paste
  • 1/2 tsp black pepper powder
  • 1/4 tsp cumin powder
  • juice of half a lemon
  • some chopped coriander
  • salt to taste

Instructions

  • Boil the pasta as per packet directions and drain.
In the meantime, heat the oil in a pan, add the onions and fry until translucent. Add the ginger, garlic and chopped tomatoes. Cook until the tomatoes are mushy. Add the cumin powder. Stir together then add the ketchup/sauce.
Next add the drained tuna and chopped green chilli. Mix well, making sure the tuna flakes apart and gets well-coated with the sauce. If you want the tuna mixture slightly saucy, add the water and mix, allow it to simmer for a couple of minutes.
Add the drained pasta. Sprinkle some chopped coriander and squeeze in the lemon juice. Give it a final stir and serve hot with a light sprinkle of black pepper powder and some extra lemon slices.
    Enjoy! 🙂
