Chicken Corn Soup

The ideal soup for when you’re feeling under the weather or when you want something light and healthy. Makes for an excellent starter too!

Ingredients
  

Ingredients

  • 2 pieces chicken with skin leg and thigh
  • 1 onion. sliced
  • 1 carrot roughly chopped
  • coriander stems
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp garlic paste
  • 1/2 tsp ginger paste
  • 3-4 whole black peppercorn
  • 1 green chili
  • 3 cups water

Other Ingredients

  • 1 tbsp corn flour mixed in water to form a paste
  • 1/4 cup sweet corn roughly grinded
  • 1 egg lightly beaten
  • 1 onion chopped fine
  • 1 tsp butter
  • salt and pepper to taste
  • 1 tsp soya sauce
  • 1 potato cubed, boiled and smashed, then blended with some water or soup

Instructions
 

  • Put the chicken and all the ingredients in the first list in a pan. Boil on low heat for about 15-20 minutes or until chicken is tender. 
    Remove chicken pieces, let them cool, peel off skin n discard it, and then shred the chicken. Sieve the soup/broth and discard the onion/carrot/coriander/peppercorn.
    Melt the butter and add the chopped onions. Fry until translucent then add the shredded chicken pieces and stir for a min. Next, add the chicken soup/broth, crushed corn and mashed potato.
    Bring to a simmer, add the corn flour and boil on medium low until it thickens. Season with salt and pepper.
    Add the egg and quickly beat it in with a fork so it forms threads as it cooks.
    Splash some soya sauce, chopped coriander or lemon juice and serve!

  1. Aslm alkm Fauzia, how much water should be used when mixing corn flour?Should it just be a little bit to make a thick paste?

    1. W/Salaam, thank you! Yes just a little bit of water to make a smooth paste. It doesn’t have to be very very thick, as long as it is smooth and without lumps, it’s good enough.

  4. Slms fauzia why do we have to add the onion and carrot whilst boiling the chicken as we actually discard the veggies?can we not use these veggies.

  5. W/Salaam, the veggies are added to infuse their flavour and nutrients into the broth/soup. You can use them if you like, but normally the flavour will be already retained in the soup.

  7. W/salaam, thank you. It means the stems of the coriander/dhania. Don’t just chop the leaves and discard the stems, add those too and they will increase the flavour in the soup.

  8. hi fauzia i made this soup yesterday its taste was really gud but after about 5 minutes of serving the soup it turned out runny like water.i followed ur recipe but what would b the reason can u plzzz help me out of this??????????

  9. Hi, did you add cornflour? You can easily mix some more cornflour with a bit of water and boil it in the soup until it thickens slightly to your preference.

Hi Fouzia..Basically I,m not a kitchen person but since i liked ur pg & ur way of explanation & recipes i loved tht…today i tried chicked soup…Its taste was good but it didn,t got thick..eventhough i added corn flour..may b u maeant by sme special branded corn flour or corn starch …& please tell me in how much water i have to add cornflour. and what if i don,t use potatoe…will it make any differrence in thickness.. Plz reply me..Allah hafiz

      1. Hi and thank you. Cornflour is the same thing as cornstarch, and it’s main purpose is to thicken soups and gravies. Maybe the particular brand you used is not very good, just use a bit more cornstarch. Normally you can mix 1 tsp in about 2 tbsp of water. If that doesn’t thicken your soup, repeat and add until the consistency is to your liking. Potato also thickens the soup so I would not recommend that you omit it. 🙂

    1. W/Salaam, coriander sticks means the stems from fresh coriander. You can omit the whole pepper and use powdered instead. 🙂

  10. If you are using chicken breasts, how many kg or grams should you use? Also how many does this recipe serve?

    1. I would recommend for you to use chicken with bones for better flavour. The soup serves 2-4. And if you have no choice but chicken breasts, then about 250gm will do.

    Thank you fauzia, made it last night. Tasted nice for a 1st timer coup maker :).
    Can I skip onion in step 2 before adding the chicken broth? Also, how much salt will you add in while
    1) boiling the chicken
    2) While seasoning that is After adding the corn flour.
    I think rest of the measurements are perfect so I will always go with salt according to Fauzia’s kitchen’s taste :). Can you please suggest salt quantity next time in your new recipes? New people like me will be obliged. Thanks! 🙂

      Thanks! Normally with soups and curries it is very difficult to approximate salt as it all depends on how much the dish is simmered/evaporated and so on. You will have to taste as you go. 🙂
