French Onion Soup

One of my favourite soups, it originates from France. It’s made up of caramelised onions and beef broth, with a toasted bread slice and some cheese melted on top, giving this soup a rich and delicious flavour! Perfect for when you want a fancy yet filling soup for your lunch! 😉
Servings 2 people

Ingredients
  

  • 2 red onions finely sliced
  • 2 tbsp butter
  • 1 tbsp oil
  • 2 tbsp all-purpose flour
  • 1/2 tsp sugar
  • 1/4 tsp garlic paste
  • 5-6 cups beef broth/soup
  • salt and pepper to taste
  • 2 thick slices of toasted bread
  • 1/2 cup grated swiss or parmesan cheese or sliced swiss cheese
  • 2 oven-proof soup bowls or ramekins

Instructions
 

  • Heat the butter and oil, then fry the onions on low heat until golden. Add the garlic paste, then add the sugar and salt, and let the onions caramelize to a dark golden brown. Add the flour and stir it around on low heat to get rid of the ‘raw’ flour smell. Then slowly add the beef broth/soup and stir.
    Increase the heat to medium and let the soup simmer for 20 minutes. You can skim any oil that comes to the top if you want. Adjust seasoning to taste.
    When ready to serve, pour the soup into each ramekin/bowl then add a slice of toast on top of each bowl. Sprinkle the grated cheese, and place the bowls under a hot broiler/grill until the cheese is golden and bubbly, about 5 minutes more or less. Serve immediately!

    I am fairly new to cooking and I enjoy making your recipes as they are easy to understand and make and always turns out to be delicious!!

    I need to know what is beef broth and how to make it?
    Can you please give me the exact quantities of the ingredients needed to make about 5-6 cups of beef broth.
    Is the beef used is minced or cubed? Also can I substitute chicken for the beef?

    Extremely sorry for all these questions.

    1. Hi and thank you! Beef broth is basically beef soup made from boiling beef pieces on the bones with water, some ginger-garlic pastes, salt and a bit of black pepper. You can also make it by dissolving beef stock cubes with warm water. Yes you can substitute with chicken.
