Moist Layered Chocolate Cake

This lovely cake is most delicious, but more than that, it is one of the easiest cakes to prepare!
Servings 24 Cupcakes

Ingredients
  

Ingredients for Cake

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 tsp. baking powder
  • 2 tsp. baking soda
  • pinch of salt
  • 1 cup milk
  • 1/2 cup vegetable oil or melted butter
  • 1 tsp. pure vanilla extract or essence
  • 1 cup HOT brewed coffee 1 tsp. of instant coffee mixed in a 1 cup of hot water
  • 2 eggs

Ingredients for Ganache

  • 8 oz. semi-sweet chocolate cut into small pieces (227gm)
  • 3/4 cup whipping cream 180ml
  • 1 tbsp. unsalted butter 15gm

Instructions
 

  • Preheat oven to 175 degrees Centigrade and grease and flour two 8 inch cake pan. In a bowl, mix together all the dry ingredients.
    Create a well in the center and add all the rest of the ingredients except coffee. Mix well until combined and then add the hot coffee. Mix once again.
    Pour into greased pans and bake in the middle rack in the oven for approximately 45 minutes or until a skewer comes out just clean. Cool on a wire rack.
    Slice each cake into two slices, then layer using buttercream frosting, and cover the cake with melted chocolate or ganache. I sprinkled crushed pistachios and almonds on top. For the frosting used in the layers, I used THIS buttercream frosting with some cocoa added into it.
    For the Ganache
    Place the chopped chocolate in a heatproof bowl. Set aside. Heat the cream and butter in a medium sized saucepan over medium heat. Bring just to a boil. Immediately pour the boiling cream over the chocolate and allow to stand for 5 minutes. Stir until smooth, then just pour or drizzle it over the cake and let it fall on its own down the sides of the cake.

    1. Yes Nazia, you can use plain hot water. But I find the coffee adds depth to the chocolate flavour of the cake.

    1. Hi, yes you can use double cream, no need to double the amount, it will work just as well as whipping cream only that whipping cream whips up lighter.

I made the cake and it was so delicious, would advise whoever intends on making it that definitely use greaseproof paper because my cake stuck to the bottom even though I greased the cake tin, it was really really nice, if I could upload a picture here I would, just one quick question, how would I make the gancache more thicker?

          1. For thick ganache the chocolate should be double the quantity of cream n if it gets too thick put some more cream

    1. Hard to say with cakes, approximately 10-16 ppl depending on how you cut the slices.

    1. Yes you can use a mixer, but be careful not to over-mix. Just until the batter is combined. And yes you can make cupcakes with the batter.

    1. About 40 minutes. Check with a toothpick at that time, if it comes out clean it’s done, if not, bake it a little longer.

    1. W/Salaam and thank you! Drinking chocolate is sweet unlike cocoa powder, so the results may vary. I would recommend that you get some cocoa for best results. Otherwise reduce the sugar in the recipe slightly and use the DC but the colour of the cake will not be as dark as the one that was made using cocoa powder.

    I have only a 10 inch pan.. So how do I increase the ingredient?

    I dont want the height of the cake to reduCe, so pls help me 🙂

    1. W/Salaam, is the pan deep enough to accommodate the extra batter? If so make 1 and a half of the amounts of everything. Like instead of 2 cups flour, use 3 cups flour, instead of 2 cups sugar use 3 etc. The baking time will be longer too though. Otherwise bake the same recipe twice, you will get 2 layers which you can stack one on top of the other with frosting in the middle.

    I came upon your blog, some days ago – via the bubble pizza page – and ever since have been itching to give your yummy recipes a go. I browsed around, subscribed to your updates, and waited about to get all my ingredients together to give what I wanted a try. Amidst the way too many things that I wished to give a go, I just randomly gave this choc cake a whirl, and BOY was it a hit. It was for my brother and bhabi’s 2nd Nikkahversary, and we all LOVED it, Alhumdulillah. I used the Betty Crocker Choc Frosting from the container cos I was short on time, but I’m definitely gonna give the mouse filling a go next time insha’Allah.

    My sister was asking, how are people so generous with their recipes. They just share without getting anything out of it?     1. Hi. Vanilla adds a good flavour to the cake. You can use pineapple, it will taste fruity.

  10. the whipping cream used in the frosting should be whipped and measured as 3/4 cup or we can directly take whipping cream from the pack and measure it as 3/4cup

    1. W/Salaam, unfortunately not many substitutes for those two, you basically need a heavy cream to replace them.

    1. Yes you can if you like, although it turns out perfect just the way it is described.

    1. W/Salaam, cocoa powder will be the same as flour, 120gm for a cup. Veg oil and hot water, same as milk…200ml per cup.

    1. W/Salaam and thank you! Did you grease the greaseproof paper and dust it with flour before adding the batter? If you did and it still stuck, then you need to try a different kind of paper to line your cake pans with.

Dear Fauzia, i made this cake of urs on eid and it came out perfectttt!! i couldn’t believe myself how good it was, the most easy and moist cake ever, i used chocolate ganache as topping and it was delicious!! i did keep the oven temp higher this time and it was perfect, guess my oven temp needs to be a little higher than urs for cakes 🙂 Thankyou so so much for these delicious recipes!!     1. You can use it, just add sugar after melting it so that it is sweetened. Taste and adjust according to your preference.

        1. No actually the baking soda is just right, the recipe gives excellent results. Try with a new baking soda and powder. 🙂

  19. The recipe makes either one large cake, or two 8″ cakes. So yes, you can slice each cake to make two slices. Or if you are just making one large cake, slice it in two as well, or more if you can.

    I made this today. should the cake batter be so watery, thin though? half the cake fell apart so I couldn’t cut it in half 🙁 tasted okay-ish though. Just dont know where I went wrong.

  25. For this recipe the baking soda is important. And it shouldn’t have a smell unless the baking soda is old, try using a fresh pack or change the brand to a different one and see if that helps. 🙂

      1. Oh I keep changing brands of baking soda, since am not from Karachi it would be hard to give you a local brand. Best to ask at the supermarket which is the best one they have. As for the betty crocker tubs you may be seeing, make sure it is whipping cream and not frosting, those are two completely different things. Whipping creams would be in the refrigerated isles, it comes in liquid form and then whipped or used as is like in this recipe to make ganache. Please check my whipped cream recipe also in this cake folder for the whipped version.

  26. hi i want to make this cake but in white chocolate so for the buttercream i wont add any cocoa powder and for the ganache i am going to use white chocolate instead of dark chocolate but how should i make the cake so its not chocolate cake?

    1. Hi, you can make white buttercream and ganache, but the cake recipe cannot be altered to make it plain with the same results. You can either go for it as it is (chocolate cake with white frosting/ganache) or use my vanilla cake recipe for the cake if you want it white. 🙂

    1. Hi, please refer to this part of the recipe: Create a well in the center and add all the rest of the ingredients except coffee. Mix well until combined and then add the hot coffee.

    1. W/Salaam, you can use simple chocolate but am not sure whether 1 pack of cream would be enough coz I don’t know the size of that pack of cream.

    1. Unfortunately you will need both the ingredients for this recipe. Baking soda (bicarbonate of soda) is very easily available in most shops n supermarkets. 🙂

    1. W/Salaam, halal versions are available online or in asian/muslim shops worldwide. Brands will depend on which country you are located.

  36. I hear ASDA (sp?) stocks halal vanilla essence. Always go for essence as extract almost always WILL contain alcohol. Also check the small muslim-run grocers, you won’t miss it. Otherwise if you have relatives in Dxb or any other muslim country, you can get them to send you halal vanilla powder or essence.

    1. Hi, yes it will be runny that is fine. Follow the ingredients amounts exactly for best results. Just make sure that you preheat the oven, bake for the recommended time and use FRESH and NEW ingredients especially of the baking soda.

  39. hi fauzia.. i m just out of the kitchen..tried the cake… and it was a mess:( i have microwave oven..the last time i tried choc brownie at simple cook for 4mins it was wonderful…. bt this cake was half uncooked at the bottom…my ingried wr halved and i cooked it at four mins…thena gain for two mins more…total six bt it was still uncooked and the taste is also not gd…plzz help..

    1. Hi, sorry but I cannot be of much help as I do not ever bake in the microwave so cannot know what might have gone wrong in that process.

    1. W/Salaam, yes you can make this into cupcakes and any frosting will work just fine. I would not use caramel frosting for these, the cupcakes will end up being overly sweet.

  41. Salam. U r a great cook! Wanted to ask if this recipe will work for stove top baking? (Since I don’t have an oven). Or which other chocolate cake recipe will work for stove top baking? Also I don’t have baking soda at home. Just have baking powder. Are both the same thing? Can I substitute powder for soda?

    1. W/Salaam, thank you. Yes it should be fine for stove top baking, or otherwise go for the basic chocolate cake recipe also in this folder. Typically you cannot replace baking soda with baking powder as baking soda and baking powder work differently. Baking soda is a pure base, while baking powder is a combination of base and dry acid. The other (basic cake) recipe doesn’t require baking soda, so maybe it would be best if you go with that one.

  43. Yes it would most probably be your baking soda. How fresh was it? If old baking soda is used, that would happen with any recipe. Please make sure to use fresh baking soda always for best results. There actually should be no smell or weird taste at all in the cake.

    1. Same temp, but bake them for just 15 minutes or until a toothpick inserted into one of them comes out clean.

    1. W/Salaam, yes the oil is in place of butter. And simply mix with a spoon, no mixer needed. 🙂

    1. W/Salaam, thank you! I have a pineapple upside down cake, but am guessing the cold cake you mean is more of a cream cake? If so, use my strawberry & cream sponge cake recipe, just substitute the strawberries with pineapple chunks. 🙂

    1. Yes it is ok to use both. As for the oil, if you skip it you will need to use melted butter in it’s place. It is a crucial ingredient. 🙂

    1. W/Salaam, all purpose flour is the same as plain flour. Self rising flour is plain flour that has baking powder added into it.

Hi Fauzia, i tried making the cake with half the quantity of ingreidents and the cake was baking well however the sides were cookd and the middle portion remained moist still after 45 min so i cooked it further due to which the side portion ended up becoming little harder than softer and the ganache has not been abosrbed by the cake like the one displayed in the pic above. Kindly advise what could be the reason for the same as i need to bake the cake for my hubbys birtheday which in after 2 weeks…

    1. Hi! Did you preheat the oven before baking? And is the heat in your oven evenly distributed or is it only from top or bottom? Also did you place the cake in the middle rack of the oven?

My oven is a small one which can accommodate just 1pan , so can I make the batter for both the cakes at oneshot and bake them one at a time or should I make 1 cake and once that’s done and cooled make the batter for the second cake and thn bake it ? If I can make the batter for both cakes at one go how do I store the second half till its time to bake ? Will it affect the taste and texture of the cake ?

      W/Salaam, you can make the full batter and bake one cake after the other. Whilst the first one bakes, keep the second one covered so it does not dry out. Try to bake it immediately after the first to prevent the leavening agents from losing their power.

      This recipe works best with the cocoa as it reacts with the baking soda to give that awesome moist and delicious texture. It will not turn out as good without the cocoa.

      W/Salaam my dear, 3/4 cup means three-quarters of a cup. That means more than half but less than a cup. 1 cup of cocoa powder is 120gm. So 3/4 would be 90gm. You have used waaay more than is needed for this recipe. Do try the recipe again and inshaAllah it will be better.

    hey. you didn’t mention anything about refrigerating this cake or the ganache so i was wondering can this cake be refrigerated or will it get hard? if there’s a chance of it getting hard, can i drizzle the sugar syrup on the cake before applying the ganache? will it work? will it stay moist and soft if it’s refrigerated?

      W/Salaam, the recipe contains 2 whole cups of sugar so it is actually one of the sweetest cakes I have on here. I personally normally reduce the sugar to 1 and 3/4 cups to reduce the sweetness sometimes. Am not sure how adding more sugar than this will make the cake taste, but you could try.

Want to make the full recipe now for my wedding anniversary… Would this chocolate cake work well with whipped white chocolate ganache? I want to use white because I want to colour the ganache for an ombre cake… Don’t want to use buttercream though.
    Another quick question… As I want a high cake (my cake pan is not high enough for the full recipe), can I make all the batter once and then bake let’s say a third at a time and let the rest of the prepared batter sit to get three cakes or shall I prepare a third of the batter every time to bake?

As for baking 3 cakes out of the batter, this could be a bit tricky because at times (depending on the quality of baking soda used) the longer the batter sits the less potent/active the raising agent becomes. I would say if you can make 2 cakes (one after the other) it would be better. Three might be stretching it too long and I cannot be sure on how the last cake will turn out.
