Sandwich-Maker Cakes

These cute little cakes are so easy to prepare and take no time at all to whip up. They are perfect for kids’ lunch boxes or as a tasty evening treat. In fact, these could actually work nicely in place of waffles or doughnuts or pancakes for those occasional extra special breakfasts.
Servings 6 pieces

Ingredients
  

  • 1/2 cup flour
  • 1 tbsp. custard powder OR cornflour
  • 1 tsp. baking powder
  • 1 egg
  • 1/4 tsp. salt
  • 1/4 cup butter
  • 1/4 cup caster/grinded sugar
  • 1 tsp. vanilla essence
  • 2 tbsp. milk

Instructions
 

  • Sieve the flour with the custard powder or cornflour, baking powder and salt. Set aside.
    In a bowl, add the butter and sugar, whisk until smooth, then add the egg and beat well. Next add the vanilla and mix it in. Add half the flour mixture and gently fold it in, then add the milk and mix. Finally add the remaining half of the flour mixture and combine until the batter is smooth.
  • Brush butter or oil on both inner sides (top and bottom) of the sandwich maker, then close it and turn it on to allow it to preheat it for about 3 minutes. Once hot, open it and spoon the cake batter in each well until full. Then close and bake your sandwich cakes for about 3 minutes, after which you can open and check to see if they are done. They will turn a golden brown when ready, and when you cut into them they will have a light and fluffy texture.
    Remove them on to a plate and dust them with icing sugar, or you could coat them with chocolate, honey or nutella. Have them warm!

      Hi, no there is nothing in the ingredients that would make them sour. Please check your ingredients if anything might have been off. Also test your baking powder, maybe it is old.

      Hi, I’ve never tried this with oil, but you can give it a try. Same amount as the butter.

      Thanks! Yes you can substitute about 1 and a half to 2 tbsp of the flour with cocoa powder.

      W/Salaam, yes you can bake as this is essentially a cake batter. Around 180 C and the time depends on the size of cake/cupcakes you plan on making.

      W/Salaam, yes you can do the mix the night before just make sure to keep it covered and then get it out of the fridge at least half an hour before you need to start making the cakes so the batter isn’t too cold.

    Only thing was I felt they lacked in sweetness.. Will add more sugar next time iA
