Tandoori Chicken Pizza with Peri Peri Fries

Our favourite home-made pizza, better than any bought pizza, any day! Served here with some fiery hot peri peri fries.
Servings 4 people

Ingredients
  

  • 2 1/2 cups all-purpose/plain flour
  • 1 1/2 tsp salt
  • 5 tbsp oil
  • 1 1/2 tsp sugar
  • 1 1/2 tsp instant yeast use 2 tsp. for colder climates
  • 2 pinches baking powder
  • warm milk mixed with a bit of water for kneading

Ingredients for Peri Peri Fries

  • 1 kg potatoes
  • 1 tbsp margarine
  • 1 tsp paprika powder
  • 1 tsp chilli powder
  • salt to taste

Instructions
 

  • First, prepare the pizza sauce and toppings using these recipes:
    Pizza Sauce
    Pizza Toppings or Spicy Chicken Topping
    Next, prepare the Pizza Dough
    Mix all the dry ingredients and the oil, then slowly start adding the warm milk a little at a time.
    Get it to a soft dough, the softer the better, knead it very well for at least 8 minutes or more if possible. Dab a touch of oil all over the dough, then cover it and place it somewhere warm. Leave it to rise to double its size, takes about 30 minutes to an hour depending on the weather.
    Once risen, punch it down, give it a quick knead and then roll it out to about 12 inches diameter and place on your greased pizza pan/tray.
    Again cover the tray with a light cloth/towel and let the base rest/rise slightly for about 15-20 minutes. For step by step instructions, check HERE
    Peri Peri Fries
    Peel the potatoes and cut them into strips then fry them twice to make them extra crispy.
    Heat 1 tbsp. of margarine, then add 1 tbsp. of spanish paprika and 1 tsp. of chilli powder plus some salt to taste.
    Once the margarine starts to bubble, get the pan off the heat and slowly add the fries into it, stirring gently with a wooden spoon to make sure all the fries are well coated. Squeeze in some lemon juice if you like and serve!

    i want to know that can we make the dough of the pizza only n after baking can freeze it for later on use?if yes than how?

    1. W/Salaam, yes that’s fine, prepare and half-bake the pizza base just until it is solid enough but still pale in colour. Wrap it well and freeze. When needed, remove, add your sauce and toppings, bake as directed! 🙂

  2. If i’m using redy made dough like arabic bread & using da pizza toppings wit saucy baked chicken pieces @ wat temperature & 4 how long shud i bake da pizza

    1. Is the dough pre-cooked? If so, bake only until the topping is done/cheese melted and the bottom of the base is toasted slightly. Otherwise for raw dough, about 25 minutes.

  3. After I have prepared the dough do I put the topping on and bake it right away? or do I need to bake the dough first and then when it is nearly done put the toppings on?

    1. Don’t bake the base, just add the topping and bake exactly as instructed. Make sure you allow the base to rest and rise before adding the topping as explained in the recipe. 🙂

    1. W/Salaam, it is powder made from red capsicum, you can omit it if you don’t have it. Normally it is sold at supermarkets and resembles tandoori masala but it is mostly not spicy.

    1. Sorry but am not a fan of using the microwave for cooking/baking as it is not very healthy to do that. Have you tried baking on the stove top?

    How much warm milk would you say the recipe needs? I doubled it today and used just over 2 cups of milk- the dough ended up fairly sticky at first but then kneaded into a lovely dough. Does that sound about right.

    I tried this pizza and came up good but only wrong is pizza base was too soft.what is the reason and what is the solution for this?jazakallah..waiting for your reply..

    1. Hi. Could be that you added soggy toppings to the base? Next time try and make sure that whatever you add on the base is on the dry side.

    1. Yes you can although plain boiled chicken will not be as flavourful. But it will still be good.

    1. W/Salaam, either you are rolling the edges out too thin, or the heating of your oven is a bit intense around the edges. Try leaving the edges a bit thicker or cover the edges with foil midway through baking to prevent them from drying out.

    1. Hi, keep it sealed at all times and refrigerate. Remove a small amount in an airtight container for your daily usage, but store that too in the fridge.

    My dough from top remain uncooked. i cooked it for long dough getting hard but uper side remains same.

    1. Could be that there is no
      Could be that there is no heat coming from the top of your oven. Please check on this. There should be an even distribution of heat from both the top and bottom.

    I want to make this yummy pizza for guest but wants to prepare it before a day to save time.should i have to bake the pizza with toppings before a day or just to bake its crusts also guide me how much i ve to bake before a day plus how to freeze it?.also tell me why sometimes the dough gets shrink while pressing or rolling on pan?.

    1. W/Salaam, you can partially
      W/Salaam, you can partially bake the base then just add the toppings and finish it off before serving the following day. Make sure the base is wrapped well so that it doesn’t dry out and do not over-bake it. It should still be soft and pale in colour after half-baking.

    Hi fauzia…doing gr8 work jazak Allah ..I huv tried ur pizza recipe n it was very yummy except my cheese didn’t melted the way it should b …is it becoz I used sliced cheese instead of the cheese bar …I even grated the slices n tried to increase the heat but didn’t work n by doing so it started burning from the top plz do reply Thank u

    salaam i tried making the pizza and once i took it out of the oven the base was still runny from inside and the rest of the pizza was cooked i tried putting it back in oven but that only led the toppings getting more cooked
    any advise please?

      W/Salaam, could be that your toppings were a bit on the soggy side. You could try to partially bake your pizza base before adding the toppings otherwise make sure the toppings especially the sauce are not watery as that will make the base soggy.

    The chicken and the toppings were awesome but my dough didn’t turn out well. It didn’t get cooked in the middle. What do you think was the problem? i kneaded for more than 10 minutes.

    salaam..your recipes are awesome..helped me alot..I made pizza today..dough was excellent but my cheese did not spread properly..I dnt know why..I followed ur recipe..use electric oven with upper rods on..plz help what may b reason

    1. W/Salaam, the cheese isn’t
      W/Salaam, the cheese isn’t supposed to spread, it just melts. So please ensure you are using a good quality melting cheese and sprinkle it all over.
