Breakfast Potatoes

These easy peasy spicy potatoes are delicious served at breakfast time on those days when you want an especially hearty breakfast meal. The best think about them is that they are amazingly easy to prepare as all the various components can be boiled/chopped/diced the night before and then quickly whipped up in the morning. They taste heavenly with a side of eggs or sausage or beans and toast. I love using these in my Breakfast Burritos too!
Servings 4 people

Ingredients
  

  • 4 potatoes boiled, peeled and cubed
  • 1 onion chopped
  • 1 small red bell pepper/capsicum cubed
  • 1 small green bell pepper/capsicum cubed
  • 2 tbsp oil
  • 1/2 tsp. black pepper powder
  • 1 tsp. salt
  • pinch of turmeric powder
  • 1/4 tsp. cumin powder
  • 2 tbsp. chopped coriander
  • 1 chopped chilli optional
  • juice of 1/2 a lime/lemon

Instructions
 

  • Warm 1 tbsp. oil in a fying pan, then add the onions and cubed bell pepper/capsicum. Stir until soften and begin to turn colour. Remove them into a bowl. Add the second tbsp of oil in a pan, heat it up and add the boiled potato cubes, cook until they colour lightly. Sprinkle the salt, peper, turmeric, cumin powder and chopped chilli. You can add a small pinch of paprika powder if you like. Then add back the bell pepper and onion mixture and toss everything together.
    Finally squeeze the lemon in and sprinkle the chopped coriander. Stir and turn off the heat. Serve with accompaniments of your choice.

        Also, I’ve found that it’s easier to just peel and chop the potatoes first, and then boil them. Is that okay to do? Or does that decrease in the nutritional value or something?

    The first time I followed the recipe as it is, and it turned out great.
    The second time, I was lazy and didn’t bother removing the fried onions n capsicum, but just added the semi-boiled potatoes to it and cooked till tender. It didn’t turn out that great; why do you think that is so?

    I love your recipes. They are very easy to do and quite delicious. I made my husband this breakfast potatoes in the morning and he couldn’t stop talking throughout the meal (that’s what he usually does when he finds a meal delicious). I was so happy.
