Pav Buns

Pav means ‘a small loaf of bread’.
These simple buns/rolls (pav) are the perfect accompaniment for Pav Bhaji (buns and veggies), Vavda Pav (potato buns) or any other meal that requires rolls/buns. They can also be shaped individually and used as burger buns. They are soft and buttery, utterly delicious.
Servings 12 Small Rolls

Ingredients
  

  • 3 1/2 cups all-purpose flour
  • 1 cup warm milk
  • 2 tbsp. milk powder
  • 1/2 cup warm water might use less
  • 1 egg
  • 1 tbsp. sugar
  • 4 tbsp. oil
  • 4 tbsp. melted butter
  • 1 1/2 tsp. instant yeast
  • 1/2 tsp. salt
  • 1 egg for egg wash before baking

Instructions
 

  • Sieve the flour, then add milk powder, sugar, yeast and salt. Then add the oil and butter and the egg, and mix together. Now add all the warmed milk. Start kneading together and gradually add the warm water a little at a time. You might not need it all, so add it sparingly until your dough is nice and soft. Knead for a good 8-10 minutes. The more you knead it the softer the buns will be.
    Touch a bit of oil with your fingertips and apply all over the ball of dough. Cover in a bowl and set aside for 40mins to an hour for it to double in size.
    Punch it down, and break off bits of dough and shape each of them into a ball. You should get about 10-12 small rolls.
    Grease your pan/pans with butter and dust with some flour. Place the rolls in it and try to get them close to each other so that there are no or very little spaces in between.
    Cover the pans and set aside for a second rise, about half an hour to rise.
    Now apply egg wash on the buns, preheat your oven to 180 C and bake for about 20-25 minutes, or until the bread is nice and golden on top.
    Brush them with some butter when they are out of the oven, and keep them covered under a towel to maintain softness. Enjoy! 🙂

Notes

The egg wash I prefer to use for a lovely glossy finish is made this way. Take 1 egg, beat it with 1 tsp. of milk. Brush on the bread/rolls/buns and bake as directed! 🙂

  2. Tried these Lovely Buns and i definately got a promotion from my Husband!!!
    This is the 1st receipe that have tried from your site 10and i was soooo overwhelmed!!
    Although mine were baked in 10 mins, i wonder why??
    As soon as they turned goldenish i took them out, afraid of them getting burnt and they were perfect.
    Any idea why it was done much sooner?

    1. It depends on the size of the buns, 10 minutes is fine for most ovens if the buns are smaller. Thanks for the lovely feedback. 🙂

    Want to desperately try these out, but the yeast I have is in form of granules n not powder, n does not dissolve with the rest of the ing. Plssss help! 🙂

  4. Hi, is your yeast INSTANT or another version, please check? What you can do is dissolve the yeast in warm water first before adding it to the other ingredients. Make sure the water is WARM not hot.

  5. W/Salaam, yes you can although results will be better if you mix maida with wheat flour (half and half)

    I made these rolls today they came out nice but there was egg smell coming from the buns 🙁 so please tell me where i am going wrong??

    what if i skip egg in the recipe?? what is the purpose of eggs in the recipe??

    1. W/Salaam, strange that there was an egg smell. Was the egg fresh? Did you knead the dough properly to make sure the egg was well combined? Could be the egg wash that caused the smell? In any case you can leave out the egg and use 2 tbsp yoghurt.

      Not necessarily, even straight from the fridge works fine. If you have the time you can get them out earlier.

      W/Salaam, sounds like you added a little too much liquid during kneading. It should be soft and slightly sticky but manageable when handled.

      W/Salaam, thanks! I have not tried making these with SR flour simply because that flour contains a lot of baking powder which is not needed for this recipe. I use the same buns for burger buns and they turn out great. 🙂

      Actually for some funny reason the comments got shuffled. You can make burger buns out of any flour. That response was to someone who asked if they can make the burger buns out of wheat flour and I advised them to mix wheat with maida for best results. But it would be better with just maida. 🙂

I have tried to reduce the ingredients but I would like to know the exact amount of each ingredient in the recipe if i decide to do it for 2 persons only. For example if i use 300g flour, what is the amount for the other ingredients listed out above should I use.

      W/Salaam, yes use half in the recipe (you can brush the other half on the buns before baking). You can use a 7×11 pan or smaller even.

    This is regarding baking , when we are baking buns do we need to heat both the upper and lower rods or it’s just the upper one
    For cookies which rods do we need to heat and also for cakes and muffins

      W/Salaam, always bake in the centre rack of the oven unless the recipe states otherwise. About the rods that need to be switched on, my oven works differently (I don’t have to switch on various rods at any time) but I believe for ovens like what you are using, start with the bottom one and then midway turn on the top. Accordingly see how the results are and adjust. 🙂

    1. I’ve been refrigerating mine
      I’ve been refrigerating mine for over 10 years with no problem. So long as you put it in a very airtight container and is not expired, it will be fine. Not the freezer. Fridge.

    1. Try using SAF Instant Yeast.
      Try using SAF Instant Yeast. Normally yeast should have a slight pungent smell, it is totally ok. As long as the baked goods do not smell foul.
