Namak Paray

Namak paray or namak para is a crunchy savoury snack of India and Pakistan. This snack bears a close resemblance to my Khari Pooris which are slightly spicier. They are incredibly easy to prepare and very moreish in flavour. Perfect evening snack!
Servings 4 people

Ingredients
  

  • 1 1/2 cups plain/all purpose flour
  • 2 tbsp. oil
  • 1 tbsp. margarine
  • 1/4 tsp. black pepper powder optional
  • 1 tsp. salt
  • 1 tsp. cumin lightly roasted and roughly crushed
  • 1 tsp. ajwain
  • pinch of baking powder
  • oil for deep frying
  • water for kneading about 1/3 cup

Instructions
 

  • Put all the dry ingredients in a bowl, add the oil and margarine and rub them into the flour until it forms small crumbs. Then gradually add the water and knead well. The dough should not be a sticky dough, it should come together smoothly.
    Cover the dough with a damp cloth for about 10 minutes. Then divide the dough into 2 balls. Roll out each ball to a circle of about 9 inches. Then prick it all over using a fork. This will prevent the strips from puffing up during frying. Cut the circle into strips and then cut each strip into segments. If you slant the cuts when making segments you can have diamond shaped pieces. Place the cut pieces on a tray.
    Repeat this with the second ball of dough.
    Once all are done, heat up the oil and deep fry on medium heat until golden in colour and crispy. Drain and allow them to cool completely before storing in an airtight container.
