Ginger Chicken

The gingery spicy warmth of this dish is fantastic, this is definitely one of my fave chicken dishes! 🙂
Servings 5 people

Ingredients
  

  • 1 chicken skinless, cut into 8-10 pieces
  • 1/2 cup julienned ginger
  • 5 fresh tomatoes chopped
  • 1 tsp. tomato paste/puree
  • 3 green chillies chopped
  • 1/2 tsp. turmeric powder
  • 2 tsp. roasted and crushed cumin
  • 1/2 tsp. coriander powder
  • salt to taste
  • 1 tsp. red chilli powder
  • 1 tsp. red chilli flakes
  • 1/4 tsp. garlic paste
  • 1/4 cup plain yoghurt
  • 1/4 cup milk
  • 1/2 cup oil drain the excess after cooking
  • chopped coriander for garnishing

Instructions
 

  • Heat oil, add the ginger (reserve a few slivers of ginger for garnishing), 1 green chili chopped, and garlic paste. Once the aroma is released, add the chopped tomatoes and the cumin, turmeric and coriander powders. Cook on medium heat whilst stirring until all the excess moisture from the tomatoes is gone and the oil gets released. Now add the chicken pieces and sprinkle some salt. Turn the heat up on medium-high and fry the chicken until color begins to change..
    Now sprinkle the red chili powder and chili flakes. Add the tomato paste. Give it a stir and reduce the heat to medium. Whisk the yoghurt and milk together, then add them into the pan. Bring to a simmer, adjust salt, cover the pan and set the heat on low. Let the chicken boil gently until tender. For extra gravy you can add some warm water.
    Finally add the remaining chopped chili and garnish with coriander and some more ginger strips.
    Serve!! 🙂

    1. I buy mine ready made. You can peel and grind tomatoes then cook them with a pinch of salt and sugar until all the water is gone. Then use accordingly.

  1. Lovely recipe ,but one question ..when i added the mixture of yoghurt and milk to the gravy it curdled making it look really bad..and i also made sure while adding it that the flame was slow and i poured in a little at a time ..so pls tell me what went wrong?? Thanks

    1. Did you whip the yoghurt to make sure it was very smooth before adding it to the mixture?

    1. Very strange, try again maybe it will work out better. Add more of the curry in a separate bowl, mix the cream in until completely smooth then turn it back into the pan. Hopefully that will work. Make sure the milk/cream are NOT cold and the curry is not too hot.

  3. I made dis today.. it ws yummy.. just dt my gravy finished before the chicken.. n i dint want to make it too thin . Cn u tell me some tip on how to make more gravy with the same amt of chicken… thanx … taste ws perfect

    1. You can double all the rest of the ingredients (aside from the chicken) and that will give you double the gravy. Thanks for the awesome feedback!! 🙂

    1. This recipe will suffice 4-5
      This recipe will suffice 4-5 people so you will need to make one and a half of the recipe. And if you increase on the chicken you need to increase on the rest of the ingredients too.

      W/Salaam, the tomatoes help build the sauce for this dish, but yes you can omit them although the dish may not be as saucy.
