Gajar/Carrot Halwa

Gajar or Gajjar Halwa is an easy yet delicious sweet dish made with carrots, perfect for all occasions and best served warm but can be had cold too.
Servings 8 people

Ingredients
  

  • 1 kg carrots chopped into small pieces
  • 1/2 tin evaporated milk + 1/2 cup milk
  • 1/4 cup milk with a few strands of saffron dissolved in it for boiling the carrots
  • 3/4 cup sugar
  • 1/2 tsp. cardamom powder
  • 3 heaped tbsp. butter or ghee
  • 1 tbsp. oil
  • flaked or crushed almonds/pistachios for garnishing

Instructions
 

  • Boil the carrot pieces in the quarter cup of milk and saffron for 10 minutes, then grind in a food processor.
    Heat your pan and add the butter/ghee plus the oil, then add the crushed carrots and fry on medium heat for about 5minutes.
    Lower the heat and fry the mixture until it starts getting dry and begins to stick to the bottom of the pan. You have to keep on stirring.
    When it’s quite dry and has started releasing some of the oil, add the sugar and cardamom. Keep on stirring and cooking on low heat until the sugar dissolves. Then add the evaporated milk and the half cup of milk and cook for about 5 more minutes or until all the excess moisture dries out.
    Switch off and serve, garnished with nuts.

  1. Do you boil the carrots in the 1/2 cup milk and the 1/4 cup milk with saffron together or is the 1/2 cup milk for later on?

    1. For boiling use the quarter cup of milk that has the saffron. The half cup of evaporated milk and extra milk is added later.

  2. can we add whisked egg to it ?? i added it when i made it 2 years back…n it tasted good…n after 2 days when i wanted to make it fresh for a guest ..i put it on the stove n added another egg…it got more rich in taste…so is it right???

    Can i grate the carrots in the beginning and boil in milk instead of cutting and then grinding after boiling to avoid the pasty texture in the end?

    1. Yes you can. Boil the milk
      Yes you can. Boil the milk until it thickens or reduces by half then use so as to achieve that rich flavour in the halwa. Thanks for the lovely message. 🙂

      Hi, I would recommend that you do a test run at home before doing the exam so you can time yourself. Dishes like this depend on a lot of things like the heat intensity, the size of pan, the type of carrots used etc.
