Date-Nut Squares

Delicious and exotic squares with an amazing combination of nuts, coconut and a slight hint of citrus.
Servings 20 pieces

Ingredients
  

  • 1 cup self-rising flour
  • 1/2 cup caster sugar
  • 1 cup desiccated coconut
  • 1 tsp. lemon rind
  • 1 cup dates de-stoned and chopped
  • 1/2 cup nuts ground (I used almonds)
  • 180 gm butter melted
  • 1 egg white
  • 1/4 cup cup of water or milk

Instructions
 

  • Mix flour, sugar, coconut, lemon rind, dates and nuts well with a spoon till combined thoroughly.
    Beat the butter and egg white well then add the dry ingredients to it and all the water or milk. Mix it all well then put it in a greased baking sheet and bake at 180degrees C for about 20 mins or until light golden.
    Let it cool for 5 mins and transfer to a rack, let it cool well, cut into squares and enjoy!

      Dry the coconut on the stove top on slow heat or in the oven before using it.
