Chicken & Veggie Croquettes

These croquettes are easy to make and super flavourful!
Servings 25 people

Ingredients
  

  • 1/2 kg white potatoes boiled, peeled and mashed
  • 1/2 cup boiled and shredded chicken boil with 1 tsp. garlic/ginger paste and salt
  • 1 capsicum chopped very finely (you can use a combination of colors if you like)
  • 1 small onion chopped finely
  • 1 carrot grated
  • 1 tbsp. oil or butter
  • 2 tbsp. chopped coriander
  • 1-2 green chillies chopped
  • salt to taste
  • juice of 1 lemon or to taste
  • 1 tsp. black pepper
  • 1 tsp. chilli powder

Instructions
 

  • Heat the oil, then add the onions, capsicum and carrot. Cook them down for just a couple of minutes to slightly soften them. Then add them to the mashed potatoes, add the green chillies, salt, lemon, chilli powder, black pepper, chopped coriander and the shredded chicken. Mash together and adjust the spices n salt to your taste.
    Shape the croquettes, cover and refrigerate them for at least half an hour, or several hours preferably if possible.
    When ready to fry, beat one egg with a tsp. of water. Put some breadcrumbs in another plate. Dip the croquettes in the egg then roll one at a time in the breadcrumbs until well coated. Fry on medium heat until golden and crispy. You can shallow fry if you like, but I prefer deep frying these to get an even perfect colouring.
    Serve with chutney of your choice and enjoy! 🙂

    1. Yes you can, although I would recommend not to freeze dishes with potatoes as they tend to release a lot of water as they thaw. However if necessary you can freeze them, then fry them in hot oil directly from the freezer.

    1. W/Salaam, thanks for the lovely feedback! Did you peel the potatoes before or after boiling? Best results are when the potatoes are boiled with their peels then peeled and mashed. This prevents them from taking up too much oil.

  3. Tried these a few times and they are fabulous when followed exactly. Did experiment with adding some chedder cheese in the middle of the croquettes -it was a nice touch!

    1. jazakillah. do you know how long would they last in the fridge if i fry/bake them and keep them there? im traveling soon inshallah and want to leave some food for my husband in the fridge but i know he wont bother frying them himself, so im wondering if i keep them fried and in the fridge, how long should they last.

  4. Oh they will keep for a few days at least (around 4-7 days). Just wrap them individually and keep them refrigerated in a good airtight container. 🙂

  5. A question about freezing:
    A question about freezing: have any ladies here tried freezing these? And, Fauzia, in an earlier post you say that freezing can be tried provided it is fried directly from freezer in hot oil….in this case, what about the egg wash and breadcrumb coating? Btw, I made these and currently in the fridge for setting, the taste is delicious, lets hope I make it through the end once fried! Thanks for another amazing recipe.

    1. Dip them in the egg and
      Dip them in the egg and breadcrumbs before freezing. That way you will just need to put them into the oil without that process. 🙂

    1. Yes absolutely, first roll
      Yes absolutely, first roll them in cornflour or even regular seasoned flour, then dip them in the milk and then roll them in the breadcrumbs.! Alternatively, in place of the milk and breadcrumbs you can dip them in a batter made of gram flour and water, seasoned with a bit of salt n garlic or chilli or left plain. 🙂

    I made this for yesterday iftar.taste ws good but it didnt come out crispy 🙁
    I follwed al ur instructions. When i boiling potatos i cut them in to half. And i freesed
    qrouettes about two hours. Plz tell me where did i go wrong???

    1. Then it could be that the oil
      Then it could be that the oil was not hot enough when you put them in. Try ensuring that the oil is very hot to instantly crispen up the exterior. Remember that everything else is already cooked, we are simply frying to seal the outside and give it a good colour and crunch. So do not fry them for overlong at low heat as that would make them soft and soggy.

    Today I tried this recipe, they shaped out very beautifully bt when I dipped them into egg n then breadcrumbs… they started to break during frying… heat was medium… can you plz tell me whats wrong with these croquettes…

      W/Salaam, thank you! Sounds like either the potatoes had absorbed too much moisture or the oil was not hot enough. Try refrigerating the croquettes for a few hours (keep them covered) before frying them. Make sure the oil is hot.

    Can I skip the potato and add something else to make it easier to freeze. As you mentioned that potatoes release water when thawed.

      W/Salaam, potatoes add to the binding of the ingredients, you can use them just make sure not to thaw the croquettes before frying. Fry them straight from the freezer into the hot oil.

    I came across your website some months ago and remembered it and came back last week and collected a bunch of recipes because they look easy and tasty.
