Chicken Fajitas

Fajitas are delicious and spicy Mexican style wraps filled with either beef or chicken strips along with peppers and onions.
Servings 8 Fajitas

Ingredients
  

Ingredients for Chicken Marinade

  • 500 gm boneless chicken breast sliced and cut into strips
  • 1 tbsp oil
  • 1 tsp garlic paste
  • 1/2 tsp ginger paste
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp oregano
  • 1 tsp cumin powder
  • 1 tsp red chilli flakes optional
  • 1 tsp spanish paprika
  • juice of 1 lemon/lime 2 tbsp

Other Ingredients

  • 8 tortillas or wraps
  • 2-3 tbsp oil
  • 3 bell peppers sliced thinly (you can mix various colours or use just one colour)
  • 1-2 large onions sliced thinly
  • 1 tsp red chilli flakes (or chopped red chillies
  • 2-3 tbsp fresh cilantro or coriander leaves chopped
  • sauce of your choice hot sauce, guacamole, salad, sour cream, salsa, chopped tomatoes etc

Instructions
 

  • The wraps used in fajitas are known as tortillas.

    For beef fajitas, you can use this recipe for the filling:  Beef Stir-Fry 
    Mix all the marinade ingredients in a bowl, along with the chicken strips. Combine well and cover. Set aside to marinate for at least 30 minutes or refrigerate up to overnight.
    Make sure to remove the chicken from the fridge at least 30 minutes before you begin to cook so as to allow it to come to room temperature.
    Heat a tbsp of oil in a grill pan. Add the marinated chicken strips and cook on medium high heat until cooked through and slightly charred. Do not overcrowd the pan as this will end up steaming the chicken rather than grilling it, do this in batches if need be. Once all the chicken is cooked, remove onto a plate and set aside.
    If there is any bit of the marinade left over, do not discard it.
    Drizzle another tbsp of oil in the same pan. Add the sliced onions and bell pepper strips plus the salt and chopped chillies (or chilli flakes) and stir fry them until they take on some colour and begin to char. Then add in any leftover marinade and cook over high heat for a couple of minutes. Sprinkle in the cilantro.
    You can then either return the chicken strips back into the pan and mix them together with the peppers and onions or serve everything separately.
    To assemble, lay a warmed tortilla wrap, apply some sauce/salad followed by the chicken, peppers and onions. Roll and serve immediately.

      You can use a pinch of tandoori masala, paprika powder though has a different flavour. It is made from powdered capsicum/red pepper.

    Fauzia, Can you please recommend a substitute to grilling. I have a stove grill but normally the chicken sticks to it too much and dries up. Even in the oven it dries up. It doesn’t stay as juicy. Can you please provide a tip (for cooking or marination) that will leave the moisture in the chicken. Thanks your recipes are always amazing.

    1. How about you simply fry the
      How about you simply fry the sticks in about 1-2 tbsp of oil for just 3-4 minutes per side in a non-stick pan. This will give you moist and juicy results.

    Only because of your recipe, and your helpful responses to fellow/sister cooks, did it occur to me to marinate the chicken overnight. I’ve made fajitas many times, but the tenderness and flavor imparted by this important step is what was missing. Thank you for so improving a staple in our household.

    Salam, is there any specific sauce that you would recommend? Whats your preference?

    1. I normally like mayonnaise
      I normally like mayonnaise mixed with some chilli sauce. I find it adds a bit of a creamy component to the wraps. If you like avocado, then that too is great.
