Chicken Bread

One of my personal favorite recipes and a definite keeper of a recipe!
I have included step by step instructions with pictures HERE
Servings 3 Medium Loaf

Ingredients
  

Ingredients for Dough

  • 4 cups plain/all purpose flour
  • 1 tbsp. instant yeast
  • 2 tbsp. powdered milk optional
  • 1 tsp. salt
  • 4 tbsp. oil
  • 1 egg plus one for glazing
  • 1 tsp. castor sugar
  • 1/4 tsp baking powder to reduce any yeasty smell

Ingredients for Chicken Filling

  • 1 1/2 - 2 cups chicken boiled and shredded 250-300 gm when uncooked
  • 2 small onions finely chopped
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 2 tbsp. coriander leaves
  • 4 green chilies chopped
  • 1 tsp. garam masala powder
  • 2 tbsp. flour
  • 2 tbsp. butter
  • 1 cup milk
  • sesame seeds as required

Instructions
 

For the Chicken Filling:

  • Heat 2 tbsp. butter fry onion till soft then add 2 tbsp. flour with 1 tsp. salt, 1 tsp. black pepper, 1 tsp. garam masala.
    Add the milk, cook till thick, mix in the shredded chicken add chopped green chilies and coriander leaves, remove and cool completely.
    The filling will look like THIS

For the Dough:

  • In a bowl mix together 4 cups flour, 1 tsp. salt, 1 tsp. castor sugar, 2 tbsp. milk powder, 1 tbsp. yeast, 1/4 tsp baking powder, 4 tbsp. oil and 1 egg, knead to a medium soft dough with slightly warm water, leave to rise for 1 hour.
    Divide the dough into two or three depending on how big you want the loaves. Proceed with viewing the subsequent steps to see how the bread is shaped.
    Now divide the dough into two or three parts depending on what size loaves of chicken bread you want. Roll the dough to a rectangular shape, snip the sides with scissors or a knife, put filling in the center and fold each side so they overlap each other (like a braid) the filling will show slightly but that’s ok, brush top with beaten egg, sprinkle sesame seeds and bake on 200 degree C for 25 minutes or so.
    Right after taking out of the oven apply butter well on whole bread and let it rest covered with a cloth for 2-3 min to soften the bread completely.

Notes

I always make big batches of chicken bread at a go and then wrap them well with film or foil, then put them in some sort of a cellophane bag and tie it up tight and freeze. They can keep up to 4 weeks! When you need one, you just thaw it out overnight in the fridge or keep it out on the counter until it’s thawed out, then unwrap and zap it in the micro for a minute or so until it warms up, and then splash a little bit of water using your fingertips on it and put it in the oven for about 5 minutes to freshen it back up. Becomes as good as new! 🙂

    1. Fan-assisted oven, not microwave. Takes about 25minutes in the oven, not sure about the time it would take in a microwave.

  4. Salaamz fauzia. I attempted this recipe. I didn’t have instant yeast so I used dry yeast but the dough didn’t rise:( shall I scrap the dough and make it again or shall I fill it anyway?

  5. W/Salaam, please go through this note and see if any of the tips given will help revive the dough. Since you used dry yeast, did you remember to activate it first before adding it to the flour? Yeast

    1. W/Salaam, yes you need to preheat the oven to the recommended temperature (200 C)

    1. Hi, powdered milk is not the same as instant dry milk, it is slightly different but you can use the instant in it’s place or use fresh milk. Castor sugar is grinded regular sugar.

        1. Yes any indian store, even regular supermarkets should have it. Otherwise just use fresh milk in its place.

    I attempted this recipe… however, I did not “activate” the dry yeast (i didnt know i had to)… is it harmful? also, I notice that the dough was not baked properly where I made the “braids”… any tips?

  17. Hi, no it is not harmful, DRY yeast needs to be activated in order for it to function properly otherwise the dough does not expand well or become airy and light.

  22. Salaam Fauzia di. I wanna make this recipe again for my vegetarian friends. So can u suggest me a substitute for egg-for both dough n glazing? And can I make chicken bread with whole wheat flour?

    1. W/Salaam, use 2 tbsp yoghurt in the dough in place of the egg and for the glaze, brush with butter or milk. And yes you can use whole wheat flour, but if you like, mix half plain and half whole wheat for better results.

    1. W/Salaam, try not to make the dough too sticky and yes you can chill it for a bit to help you handle it better. 🙂

    1) Whats the difference between self raising flour vs all purpose flour? Do you know what are they called in Urdu?

    1. Hi! All purpose is plain
      Hi! All purpose is plain flour/maida. Self rising is maida which has baking powder and salt in it. In every cup of plain flour, you add one and a half tsp baking powder and a pinch of salt to make it into SR flour. Mushrooms alone as a filling might not be that good, maybe combine it with chicken and onions.

      You can use this yeast, you will need slightly more (quarter tbsp aside from the 1 tbsp the recipe requires). Make sure to follow the instructions on the yeast pack, activate it in warm water (not HOT) and then allow the yeast to froth for about 10 minutes, then use it in the recipe.

      Hi, does your oven have a top grill? If so, check whether it comes on during baking. If not then see if you can manually turn it on to give the bread colour during the last few minutes of baking.

          I’m afraid some top heat is needed to get a good colour, maybe put the bread on the topmost shelf so whatever warmth is being emitted from the top of the oven can colour the bread. Make sure to also brush the bread with egg wash.

      W/Salaam, thank you! You can use whole meal flour in place of plain flour (although results will be a bit denser as the two flours normally give different results). Or if possible you can mix a small portion of white flour with the whole meal flour (like three-quarters whole meal and a quarter of the amount plain flour) so you achieve some lightness/softness to the bread. Will be posting a brown bread recipe soon inshaAllah. 🙂

    one of the best baked items i have ever prepared.i love baking but never tried making chicken bread. as im not a big fan of bakery bought chicken bread. so it never appealed me. i tried this just because of my mother in law. she likes it. but uffff when i tasted it …i dont have words to say how delicious it was. mashaAllah MashaAllah MashaAllah. i made 3 medium sized breads from this recipe, was thinking to store 1 or maybe 2 leftovers. but they were vanished in no time. though i dont have a big family…we would hardly finish only 1. but lolz my family loved it. my husband was like ” can you make it again tomorrow? ”

    So I have a question about kneading the dough. It was pretty sticky as I kneaded. I added a bit of warm water as I went along and then used your tip by oiling my palms and making a ball. To roll it out, do I use flour also and will it be still sticky?

      Thanks! Reduce the lower heat if it has a separate setting. Otherwise bake for slightly shorter time and make sure the pizza is baking in the center/middle rack of the oven.

      W/Salaam, no that is not instant yeast. Sounds like it is fresh yeast. Have never worked with that so am not sure on how it reacts. Instant yeast will have it mentioned on the label that it is instant. It is in powdered form/rough granules.

      W/Salaam, yes that is fine. Keep them covered in the fridge. And do not store them too long or else the yeast smell will become very strong. If possible just bake them then store, and reheat before serving.

      Thanks Asiyah. Yes to both questions, chicken fillets, cut them up into cubes and boil then shred. You could use chicken with bone too if you like, same method applies, boil and shred. 🙂

      Yes you need to turn on the top grill during the last few minutes if your oven does not colour the rolls on its own. Just keep an eye on them so they do not burn.

    Aslm, I tried this bread today and all was well dough wise, filling etc, the dough was very soft but. I noticed that the top of my bread was browning too quickly. I have a fan oven and set the temperature at 200 degrees as suggested, could it be that because of the fan oven I have to reduce the temperature slightly? Or should I cover the bread with a foil half way through cooking to avoid over browning? The thing is that I took out the bread out of the oven after 15 mins but it was underdone at the bottom whilst perfectly golden on top.     Asslm, thank you for the advice, had another go today and reduced the oven temp to 180 and it worked just fine. I also did it with a twist, I omitted the garam masala, chillies and coriander and replaced with oven roasted tomatoes, sautéed mushrooms, basil and some cheese. I however did the chicken as you explained except that it was a plain mixture with no spices and chillies. Thanks again for the wonderful recipe and for so kindly replying.

      W/Salaam, you can although the bread ingredients already contains milk powder, so it does soften but you can use milk if you want for kneading. And no, you need to bake this bread immediately after shaping otherwise it will end up over proofing and smelling very yeasty.

      About the elements that need to be switched on, my oven works differently (I don’t have to switch on various rods at any time) but I believe for ovens like what you are using, start with the bottom one and then midway turn on the top. Accordingly see how the results are and adjust. 🙂

      Hi! It’s generally difficult to estimate how much water/milk is needed exactly as different flours absorb differently and different altitudes affect absorption rates. Mix half a cup of milk with half a cup of water. Warm it up, then gradually add and knead the dough. Use as much as it will take to get the dough to a soft and smooth consistency. You may need more water/milk or you may not need to use all. Once you’ve got the hang of it with your particular brand of flour, you will know for sure for next time.

I always make this recipe in large batches and sometimes don’t have the time to boil and shred lots of chicken… If chicken mince is something you can recommend how would I prepare it? (would I boil it first or can I cook in with the other ingredients without pre-boiling the keema first)? JZK

Just dry it off without adding any water, but be sure to season it with salt and pepper and add some ginger/garlic paste to add flavour to the mince. 🙂

    1. Hi, it should be ok although it is hard to be sure as you can never tell how good a ready made bread dough is until you bake it. With this one you are guaranteed perfect results if the recipe is followed accurately.

    1. W/Salaam, I would recommend that you half bake it and then let it cool and freeze. When ready to use just brush the top with milk and bake it until its golden.
