Baked Nuggets & Potato Wedges, Onion Rings & Garlic Bread

Baked Chicken Nuggets are a healthier alternative to these delicious Fried Chicken Nuggets. I have served them here with Garlic Bread, Onion Rings and Spicy Potato Wedges.

Ingredients
  

Ingredients for Baked Chicken Nuggets

  • 500 gm boneless chicken breast cut into cubes
  • 1 tsp garlic paste
  • 1 tsp ginger paste
  • 1 tsp salt
  • 1 tsp red chilli powder
  • juice of 1 lemon
  • 1/2 tsp turmeric powder
  • 1/4 tsp black pepper powder
  • 1/2 cup cornflour
  • 1/2 cup breadcrumbs
  • 1 egg whisked with 1 tsp milk

Ingredients for Onion Rings

  • 3 large onions
  • 1/2 -3/4 cup flour
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp baking powder
  • 1 egg well beaten
  • 1/2 cup milk
  • cooking oil for deep frying
  • 1 cup breadcrumbs optional

Ingredients for Spicy Potato Wedges

  • 5-6 small potatoes washed and given a slight boil for about 5 mins, then cut into wedges with the peel.
  • 1 tbsp oil
  • 1/2 tsp chilli powder
  • 1/4 tsp garlic paste
  • 1/2 tsp salt
  • pinch of turmeric powder

Instructions
 

  • Baked Chicken Nuggets
    Clean, wash and completely dry the chicken cubes. Then marinate them in the garlic, ginger, salt, chilli powder and lemon juice for at least an hour or up to overnight. Make sure to remove the chicken at least half an hour before you need to cook the nuggets.
    Preheat the oven at 180 C.
    Prepare 3 plates, one with the flour with a pinch of salt and pepper, the second with breadcrumbs and the third for the beaten egg. Then dip the chicken cubes first in the flour, then dip in the egg, and lastly roll them in the breadcrumbs. Place them on a foil-lined grease tray and bake for about 15-20 minutes or until the nuggets are golden and cooked through.

Onion Rings

  • Wash and peel onions, cut into ¼ inch thick rounds. Separate rounds into rings. In a bowl, combine flour, seasonings, and baking powder. Dust your onion rings in this flour mixture and set them aside. In a measuring jug, whisk together egg and milk. Add milk mixture to dry ingredients, blending well to form a thick batter.
    Dip the flour-dusted onion rings into the batter, then place them on a wire rack so that any excess batter drips off. Finally, if you want them super crunchy, coat them with breadcrumbs, making sure the breadcrumbs have stuck well on both sides. Repeat until all the onion rings are done. Fry in hot oil for 2-3 minutes until golden brown, turning them midway so both sides are coloured evenly. Remove to paper towels to drain thoroughly. Sprinkle with a little salt just before serving.

Spicy Potato Wedges

  • Wash the potatoes thoroughly and boil them for about 5 mins so they are not completely cooked through, then cut into wedges with the peel. (you can remove the peel if you like)
    Pat the wedges dry with a kitchen towel and then in a ziploc bag, put all the rest of the ingredients. Put the wedges in the ziploc and gently shake so that the oil-spice mixture completely covers the potatoes.
    Bake on a preheated oven at 180 C for about 20 mins, or until done, turning them over once in between so they are evenly coloued..

  1. Asalaamalikum, regarding the nuggets..
    1. while baking does the top part of the oven, ie the grill, need to be opened too?
    2. do the nuggets have to be flipped over during baking?
    3. usually whn I bake nuggets (not this recipe) they get dry. how do I ensure they remain moist?

    1. W/Salaam, yes you can turn on the top grill if it doesn’t automatically come on in your type of oven, but keep a close eye so they don’t burn. If they start darkening before the recommended cooking time is done, turn off the grill and let them bake naturally. Normally mine do not need to be flipped, remove one and check to see if they are ready, if not, you can flip them and bake a little bit longer. Do not over-cook the nuggets, over-cooking always makes them dry out.

    1. Hi, you can peel if you want. Small potatoes give best results, but you can use large ones if you want.

    Assalam, I have tried the onion rings today and its really good in term of taste… but it has remained soft instead of being a bit crispy… Can you please advice me what I can do next time to make it crispy?

      W/Salaam, thanks for the feedback! Could be that you fried them on low heat? Or were the onion rings wet? Dry them with a tissue before dipping and frying, that will help. 🙂 They should be at room temp not cold.

    I tried this but the taste of cornflour was a bit too much. The chicken was ok but the coating was a bit dry and may be not sufficiently cooked. I turned the grill on
    Can u tell me what could have gone wrong.
