Al-Baik Style Broast/Fried Chicken
If you've had this amazing fried chicken either in Jeddah or Makkah or anywhere that has an Al-Baik fast-food chain, then am sure you could not possibly forget how fantastic it is. I tried many recipes but none came close, this one is the nearest to the real thing as I could get!! Fantastic crispy on the outside, yet moist and tender inside. This dish is most commonly served with Garlic Sauce.
Servings 5 people
Ingredients
Ingredients for Chicken Marinade
- 1 chicken cut into 8-10 pieces (with or without skin, up to you)
- 1 beaten egg
- 2 tbsp. all-purpose/plain flour
- 2 tbsp. corn flour
- 1 tsp. ginger paste
- 1 tbsp. garlic paste
- 1 tbsp. soya sauce
- 1 tsp. vinegar
- 1 tbsp. lemon juice
- 1 tsp. red chilli powder
- 1 tsp. cinnamon powder
- 1 tbsp. paprika
- salt to taste
- 1/2 tsp. chinese salt optional
- 1/2 tsp. black pepper powder
Other Ingredients
- 1/2 cup all-purpose flour/plain flour
- 1/2 tsp salt
- 1/2 tsp chilli powder
Instructions
- First, clean the chicken then prick the chicken pieces with a fork all over and marinate in the chicken marinade ingredients for 4 hours or prerably overnight.Next, mix 1/2 a cup of flour with 1/2 tsp. salt and 1/2 tsp. chilli powder. Put these dry ingredients in a plastic bag. Now, 2 pieces at a time, put the chicken in the flour bag and shake to make sure each piece is well coated with the flour. This helps give the chicken a perfect rough and crispy surface.Heat oil on high, add the chicken pieces without crowding the pan. You can do them in 2-3 batches. Lower the heat and deep-fry each batch for about 15 minutes, making sure to turn the chicken pieces once or twice in the oil in order to get them golden on all sides.Drain on kitchen towels and serve with fries and some Garlic Sauce!Enjoy. 🙂
u wil make us fat my god its so tempting i feel like i wil break my diet
can we skip the paprika?
Yes you can, use a bit of food colouring or red chilli powder or tandoori masala in it’s place if you can.
is this the plain flour in whch we ll dip n thn fry in oil? Or the cornflour?
Yes, plain flour.
Can I use Minced Bread Crumbs
Can I use Minced Bread Crumbs instead of Plain Flour for coating. I believe it makes it more crunchier
Absolutely, although
Absolutely, although breadcrumbs tend to colour fast so the results may look darker. You could mix a handful or two of breadcrumbs in the flour mix for a nice result.
wuts chinese salt? do i really need to put that cuz its not available in my country
It is also known as aginomoto. Leave it out, it will still taste awesome. I hardly ever include it in the recipe when I make this dish. 🙂
Chinese Salt is MSG (Monosodium sodium glutamate). It is a food additive and flavoer enhancer. It is used mainly in chinese dishes.

Jazakalalah for the wonderful recipe.I made it sent some to my niece and she called to ask me when I am opening a shop.I already made it twice in Ramadaan.
Salam fauzia apa, I’m trying this today. I don’t have cinna mon

Another thing is can i fry one hour b4 iftaar n keep them
In oven for warm pls?
W/Salaam, yes that is ok.
kindly tell me how to freeze these tempting broast?
Broasts are normally best served freshly fried but you can fry and freeze, just make sure to allow them to cool sufficiently and wrap them well. When ready to serve, let the come to room temperature then bake them in the oven to warm them up and get the crust crisp again.
Hello Fauzia,
I have a question, the first 3 ingredients that you listed (1 beaten egg, 2 tbsp. all-purpose flour, 2 tbsp. corn flour), are they supposed to be included in the marinade mixture, or for breading the chicken. I have baked the chicken with skin on, not including the first 3 ingredients, and it tasted great. It was moist and juicy. Can’t wait to try the fried version. Thanks Fauzia!
They are added to the marinade itself. Before frying the chicken is just dusted in the spiced flour. 🙂 Thanks for the lovely feedback.
Assalamualaikum………
By chance came accross this page jus yesterday …. Subhanallah…. D foodie in me came alive…… Bcame a fan in a day….. Really amazing…. Downloaded so many gonna try them out soon….

Slms jst wntd to knw dat wen we eat this al baik chicken in saudi they inject the chicken with some sauce to make it unique. Nw hw do we get dat flavour iris it done the way u make it.jazakallahukhairun
W/Salaam, my version is slightly different in method but the result will be great, try it.
Instead of Injecting Special
Instead of Injecting Special sauce, Ms. Fauzia has suggested to “Prick the Chicken with a Fork” the open pores allowes the marinade spices gets inside and to keep it marinade overnight for best flavour.
well I really would like to know your opinion how to get the injected hot spice into the chicknes, please let us know I am sure you have an idea because you are almost 80% close to the real thing, but needs to be juicier inside and the hot sauce dripping when taking a bite, Please let us know….
Have never tried that version of making the dish, sorry dear.
salam fauzia.
i want 2 know what is all purpose & self rising flour?

W/Salaam, AP flour is the same as plain flour. SR flour has baking powder in it. 1 and a half tsp per cup of flour and a pinch of salt.
is it a must to use cinnamon powder.
It gives a good flavour.

Hi, yes you can add breadcrumbs in the flour, and sure you can shallow fry them a night before, although they may end up absorbing a lot of oil, but if you have tried this method before and the results were fine then you can do that. 🙂

Made this recipe and believe me it was finished in no time. In fact I liked it better than the original Al Baik of Jeddah because your recipe was spicy which suited our taste buds. Next time will make double quantity. Thank you for all the trouble you take to make things easy for us. Jazakallahkhair
