Spicy Meatloaf with Creamy Mashed Potatoes

A homely heart-warming delicious meal.  Meatloaf is a dish of ground meat formed into a loaf shape, mixed with egg and breadcrumbs, then baked and served with your sides of your choice. We love this dish with mashed potatoes and a light salad.
Servings 6 people

Ingredients
  

  • 500 gm beef mince
  • 3 tbsp. oil
  • 2 medium onions grated
  • 3 fresh tomatoes blended with skin
  • 1 tsp. each ginger & garlic pastes
  • 3 tbsp tomato paste/puree
  • 2-3 green chillies chopped omit if you prefer mild
  • 1 tsp. red chilli flakes
  • 1/2 tsp. black pepper
  • 1 tbsp. yoghurt
  • 1/2 tsp. turmeric powder
  • 1 tsp. freshly grinded cumin powder
  • juice of half a lemon
  • coriander blended with some water to form a paste
  • 2 eggs
  • 3-4 tbsp. breadcrumbs
  • 2-3 tbsp. ketchup

Instructions
 

  • Heat the oil in a pan, add the onions and sauté until translucent. Then add the ginger and garlic paste, followed by the mince.
    Fry it until it starts to brown, then add some salt, the tomato paste and blended tomatoes. Add the turmeric, cumin powder and 2 tbsp. of the coriander paste.
    Let this simmer covered until all the water is gone, then add the yoghurt and stir together.
    Add the green chillies and red chilli flakes, adjust salt and keep cooking it down on medium heat until it dries up and starts to stick to the bottom of your pan.
    Switch off and add the black pepper plus the lemon juice and let this mixture cool for about 15minutes.
    Now beat the 2 eggs in a bowl and pour it into the mixture, stir it in using a fork, then sprinkle the breadcrumbs and combine.
    Pour this mixture into your mold, even a deep plate will do, then bake in an oven for about 20-30mins at 180 C or until it darkens and solidifies and has a lovely brown color. Remove and add the ketchup on top and then put it back in the oven for a few more minutes.
    Garnish with coriander and serve with mashed potatoes, dinner rolls and gravy.
    For Mashed Potatoes
    For mashed potatoes, use about half a kg of good white potatoes. Peel and cube them, then boil in water with some salt. Make sure you cover the pan when the water starts boiling. Test the potatoes with a knife to check when done, and if it sinks into the cubes easily, drain the potatoes and spill them into a big bowl. Add a tbsp. of butter, some salt and 2-3 tbsp. of milk. Mash them whilst still hot for best results, they will be soft and creamy!
    Adjust salt and garnish with coriander. I sometimes like to add a bit of black pepper and lemon juice in my mashed potatoes, but that is entirely optional.

    This was very yummy and easy to follow recipe! Tasty and not meaty like how meatloaf typically is. But for three of us I have quite a bit of leftover meatloaf….what could I use it for? Can I use it for bolognese sauce/pasta? Your suggestion is requested!

      Thanks for the lovely feedback. You could freeze leftovers and warm them up another day, or chop it up into rough chunks and make a simple meat and tomato sauce to serve over pasta. 🙂

    Salam fauzia. I have 2 questions about this recipe. I have made this earlier but according to the time given my meat loaf was still not binded it needed more baking I could not cut slices due to softness. I want to know how do I know it’s ready n not burning from down. I use an electric oven.
    Another thing before adding the ketchup do we have to take the meat out of loaf pan and make it opposite to add ketchup and put it back in the oven?
    Another question do u still have plan of book or no plans after the app? 🙂

      W/Salaam, you can try sticking a skewer into it, if it comes out somewhat dry it should be good enough to slice. Also avoid slicing when it is very hot out of the oven, give it 10 minutes to rest and then slice. Do not place it right at the bottom rack of the oven, use the centre rack so it bakes evenly. Apply ketchup on the top of the meatloaf, no need to turn it out. I will inshaAllah have a book out eventually but maybe not very soon.
