Banana Pudding
Bananas are some of the most versatile fruits, and this delicious banana dessert is one of my absolute favourites. It consists of layers of whipped cream, custard, banana slices and biscuits/vanilla wafers. I normally use my super easy and delicious home-made vanilla wafers but you can simply buy these or use tiramisu sponge biscuits or even cake rusks.

Ingredients
- 3-4 bananas sliced
- vanilla wafers or biscuits/cookies/rusks recipe link in instructions below
- custard pudding OR instant vanilla pudding mix recipe link in instructions below
- 2 cups whipping cream when whipped, the cream doubles in volume so you will end up with 4 cups of whipped cream
- 2-3 tbsp. icing sugar
- 1 tsp. vanilla essence
- 1 cup cream cheese
- 1/2 - 1 cup sweetened condensed milk
- 1/2 cup whole milk/full cream milk
- chocolate shavings for garnishing
Instructions
- First prepare the custard pudding using THIS recipe and allow it to cool/set (alternatively you can use one of the instant vanilla pudding mixes and mix as per the package directions).In a separate bowl, whip the cream cheese until light and fluffy. Then add the condensed milk and whole milk, beat until mixed through. Now add this mixture into the prepared custard pudding and combine.Whip the whipping cream with the icing sugar and vanilla essence until thick and fluffy. Then scoop about half cup of this whipped-up cream and gently fold it into the custard pudding mixture to thicken it up a little bit. Set the rest aside.Have your vanilla wafers (RECIPE HERE) ready or whatever alternative that you plan on using. Any crunchy simple biscuit/cookie will do.Slice the bananas just before you put the dish together to prevent them from browning too quickly. You can squeeze some lemon juice over the banana slices to reduce the browning.Now for the layering. Take a dessert bowl or 9×13 inch dish and line the bottom with the wafers. Then add a layer of custard/cream cheese pudding mix. Then a layer of custard/cream cheese pudding mix. Then a layer of sliced bananas. Then a layer of whipped cream. Then a layer of wafer again, and keep going until all our mixtures are used up. Top off with whipped cream and chocolate shavings. Chill for a few hours before serving. Bear in mind that bananas will not last too long without discoulouring, so this is the kind of dessert that works best when freshly made and served on the same day or the day after.Remember to garnish with a few Nilla wafers when serving for some extra crunch.Enjoy! Â
Notes
You can use anywhere from half a cup to a full cup of condensed milk depending on your sweetness tolerance level. For a sweeter tooth, use the full cup. For me half a cup is plenty sweet enough. So just give it a taste as you go and adjust.

Hi, sorry I do not use anything else in its place for this particular recipe. The closest substitution is mascarpone cheese.
