Reshmi Kababs

The word Reshmi is an Indian word that means ‘silk’. This is an apt description for these silken textured delicious kababs.

Ingredients
  

  • 500 gm boneless chicken breast cut into cubes
  • 1 small onion
  • 1 tsp salt
  • 2 green chillies
  • 4 tbsp chopped coriander
  • 1/2 tsp garam masala
  • 1 tsp black pepper powder
  • 1 tsp cumin powder
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 8 almonds blanched and peeled then crushed to a powder
  • 2 tbsp heavy cooking cream
  • 1-2 slices bread crust removed
  • 1 tbsp lemon juice
  • 1-2 tbsp butter melted

Instructions
 

  • Clean and pat dry the chicken cubes. Grind the onion, remove and squeeze out all the excess water. Put the onion back in the processor and add in the salt, crushed almonds, chillies, coriander, lemon juice, ginger and garlic pastes. Grind to combine and form a smooth mixture. Next add the chicken cubes and process until the texture is smooth.
    Turn this mixture out into a bowl. In the same machine, add the 2 slices of bread (make sure to remove the crust) and grind to form crumbs, set aside.
    To the chicken mixture, add the garam masala powder, cumin powder, black pepper and the cooking cream, plus half of the crushed bread. Combine well. If the mixture feels too sticky, add in the remaining bread and mix. Cover and refrigerate for the flavours to develop and to help the bread absorb any excess moisture which will help with the shaping.
    When ready to cook, remove the chicken mixture and shape on skewers. Grill or pan fry in a light drizzle of oil until cooked through, for about 3-4 minutes per side or until done. Brush them with melted butter just before serving.
    Serve with accompaniments of your choice. These kababs keep well and can be frozen for up to 2 weeks.

    Assalamu’alaikum wa rahmatullahi wa barakatuh sister. Can I omit almonds in this recipe? Will it make any difference please?

    1. W/Salaam, you can omit the
      W/Salaam, you can omit the almonds, however this particular recipe works best with almonds as they give it a really soft and silky texture and adds to the flavour. I also have another recipe for regular chicken seekh kababs which does not use almonds if you would like to take a look at that one.

      W/Salaam, thanks. Yes you can use 1 tbsp of almond powder in place of the crushed almonds. Make sure that the almond powder is very fresh as normally once nuts are crushed to a powder they begin to change in flavour.

      Freeze them after cooking, then later just allow them to thaw and warm them up gently in a lightly oiled pan.

      W/Salaam, for this recipe cream is crucial for giving the kababs that silky smooth texture. You can use whichever cooking cream that you have at home.

    1. Yes in a strainer or even
      Yes in a strainer or even just scoop the crushed onion with your hand and squeeze out the excess water. We just try to get rid of any excess moisture just so that the kababs do not break during cooking.

    1. Yes you can fry with the
      Yes you can fry with the skewer and then pull it off later OR use the skewers to shape and slide them off and into the pan. Either way is fine.

    Salam. I tried your recipe and it turned out to be amazing. Only that the kababs felt a little dry from inside and i want them to be more juicier. What can i do to make them juicy?

    Also, can we use the same recipe with same ingredients for mutton/ beef?

      W/Salaam, did you add all the ingredients mentioned without any changes? Try to avoid over-cooking the kababs as well, coz that tends to dry the chicken mince.
