Broccoli Soup

Most of us know that Broccoli is one of those nutritious super-foods that are chock-full of health benefits. Here is an easy recipe for broccoli soup that tastes amazing and is good for you too!

Ingredients

  • 2 cups broccoli florets
  • 1 small onion, chopped
  • 1 spring onion, chopped (greens reserved for garnish)
  • 1/4 tsp. garlic paste
  • 2 cups water, chicken or vegetable stock
  • 1/4 tsp. cumin powder (optional)
  • salt to taste
  • 1 small potato, peeled cubed and boiled
  • 2 green chillies
  • 2 tbsp. chopped coriander (stems and leaves)
  • 1 tbsp. olive oil or butter
  • 1-2 tsp. black pepper powder
  • juice of half a lemon

Instructions

Heat the oil/butter in a pan, add the onions and fry until translucent. Next add the garlic paste and broccoli florets. Sprinkle salt and cumin powder as well as the chopped green chillies. Stir-fry for 3 minutes, then add the broth and cover. Allow to simmer for about 10 minutes or until the broccoli is tender. Turn off the heat and sprinkle in the chopped coriander. Let this cool down slightly.

Put everything in a blender and add the boiled potatoes and blend until smooth and creamy. Return the soup in the pan and put on low heat, add pepper and check for salt. Adjust to your taste. You can add a touch of milk or cream if you want but I like this soup as is. Add water if you want a thinner consistency, or thicken it with a bit of cornflour paste if you like the soup thick.

Once done, squeeze in the lemon juice and give it a final taste. Serve with croutons or bread.
