Sweet Corn Fritters

Servings : Makes 6-8 fritters

A great snack which is super easy to prepare and tastes simply wonderful. This treat can also be served as an appetiser or even a light lunch if you accompany it with a fresh salad. I enjoy these yummy fritters with my spicy mango dipping sauce.

Ingredients

  • 1 can sweet corn, drained (400 g or 14 oz)
  • 3/4 cup plain flour (90 g)
  • 1/2 tsp baking powder
  • 1 egg, lightly beaten
  • 4-6 tbsp milk
  • 1 tbsp vegetable oil
  • 2 spring onions, finely chopped
  • 1 fresh red chilli, finely chopped
  • 1 garlic clove, finely minced
  • 4 tbsp fresh coriander, finely chopped
  • 1/2 tsp salt
  • 1/2 tsp black pepper, freshly ground

Instructions

After draining the sweet corn from a can, pat it dry with paper towels to get rid of the excess moisture.

In a bowl, sift the flour and baking powder, then add the salt, pepper, garlic, egg and milk (start with 4 tbsp and see if you need a little more, depending on the size of egg used). Whisk together to form a somewhat thick but smooth batter. Add the oil and whisk it in to relax the batter. Then add the sweet corn, spring onions, chopped chilli and coriander, fold them in.

Heat a pan and drizzle in a light drizzle of oil. Scoop the mixture with a spoon and gently flatten on the pan. Allow them to cook for about 1-2 minutes per side or until golden before flipping them over and cooking the next side. Keep going until all are done.

Serve with a dip and a salad.
