Sweet Corn Fritters
A great snack which is super easy to prepare and tastes simply wonderful. This treat can also be served as an appetiser or even a light lunch if you accompany it with a fresh salad. I enjoy these yummy fritters with my spicy mango dipping sauce.
- 1 can sweet corn drained (400 g or 14 oz)
- 3/4 cup plain flour 90 g
- 1/2 tsp baking powder
- 1 egg lightly beaten
- 4-6 tbsp milk
- 1 tbsp vegetable oil
- 2 spring onions finely chopped
- 1 fresh red chilli finely chopped
- 1 garlic clove finely minced
- 4 tbsp fresh coriander finely chopped
- 1/2 tsp salt
- 1/2 tsp black pepper freshly ground
After draining the sweet corn from a can, pat it dry with paper towels to get rid of the excess moisture.In a bowl, sift the flour and baking powder, then add the salt, pepper, garlic, egg and milk (start with 4 tbsp and see if you need a little more, depending on the size of egg used). Whisk together to form a somewhat thick but smooth batter. Add the oil and whisk it in to relax the batter. Then add the sweet corn, spring onions, chopped chilli and coriander, fold them in.Heat a pan and drizzle in a light drizzle of oil. Scoop the mixture with a spoon and gently flatten on the pan. Allow them to cook for about 1-2 minutes per side or until golden before flipping them over and cooking the next side. Keep going until all are done.Serve with a dip and a salad.Enjoy! 🙂
