Garlic Sauce

The perfect accompaniment to most bbq dishes as well as fried chicken recipes. Like this Al-Baik Broast Chicken.
There are so many ways of making garlic sauce, some prefer to make it from scratch using whole eggs or just egg whites, some add bread, some prefer it without potato, etc. This is the version I love because it is super easy to make and tastes just as awesome as the Al-Baik garlic sauce! 🙂

Ingredients
  

  • 1 large potato
  • 4 cloves of garlic use less or more depending on your preference
  • 2-3 tbsp mayonnaise
  • 2 tbsp yoghurt
  • 1 tbsp fresh cream
  • 1/2 tsp tahini sauce optional
  • 1 tbsp vinegar or lemon juice
  • 2 tbsp olive oil or melted butter
  • 1/2 tsp red chilli powder optional...I like mine spicy
  • pinch of salt

Instructions
 

  • Boil the potato with 2 cloves of garlic and a pinch of salt until potato is tender. Drain the water.
    Add all the ingredients into a blender including the boiled potato and garlic. Blend until completely smooth. Sauce will be somewhat sticky and thick. Adjust salt to your taste.
    Sauce is ready! Tastes better the following day, so can be made a day in advance and keeps well for up to a week in the fridge. 🙂

Notes

Tahini paste and sauce is normally sold, but I prefer making mine at home as it is fairly easy to do, and tastes better than the bought preserved ones. You can then store any leftover in the fridge in an airtight container for up to 4 weeks, or freeze for slightly longer. All you need to do is roast about a quarter cup of sesame seeds, take them out when they just start releasing a bit of oil but before they turn brown. (about 5-10 mins at 180 C but toss them a little bit midway through the roasting) Then let them cool for some minutes and then put them in your processor and grind them with a bit of olive oil until you achieve a smooth paste.

  2. W/Salaam, fresh cream is the same as cooking cream. You can use single cream if you have it. It is different from sour cream, but if you do not have it and only have sour cream instead, then you can use that.

  3. Hey fauzia, about the tahini sauce.. if i use without it wld the taste differ n secondly is there any substitute of tahini sauce as i dnt have it at home now and i need it to make for dinner tonite.

    1. Hi! You can leave it out, totally ok too…the sauce will still taste perfectly awesome.

    1. Paste is when you grind sesame seeds with some olive oil. Sauce is when you add other ingredients to the paste, like garlic, olive oil, parsley, some salt and pepper to taste and lemon juice all blended together.

    1. W/Salaam yes you can, although the cream adds a good smooth silky quality and a richer flavour.

  7. thanks for the recipe. just need to know if the taste will be the same if we use Frozen garlic instead of fresh and if it is made w/o cream

    1. Yes frozen garlic is fine, and you can leave out the cream if you don’t have it. Add a touch of milk in place of the cream.

    I was however not satisfied with the garlic sauce as it wasn’t like the ones I taste. I took an instant disliking to the starchy taste from the potato. I’ll omit it as well as tahini next time n see how it turns out. I also added more yoghurt and lime in an effort to bring out the sharp tang that I associate with garlic paste. If you ever get a chance to visit any Al Farooj Fresh outlets in the MiddleEast or France, do make sure to taste their garlic cups, its honestly ‘finger-licking’ good and the best garlic dip that I’ve tasted ever 🙂

    there is a better way of making garlic sauce likd in ghe takeaways

    cheap supermarket mayonnaise (must be white)
    2 tsp oregano
    2 tsp parsley
    1tsp lemon juice
    3-4 fresh cloves of garlic

    blend garlic in water…in a container mix all ingredients and the consistancy of the sauce should be runny so you can add in water.

    this is a cheap and easy way and tastes like the one that is used in takeaways.

    1. W/Salaam, with minced garlic,
      W/Salaam, with minced garlic, go slow and start off with half a tsp, then taste and adjust by adding more if needed.

      Hi, since potato actually IS an ingredient in the recipe, am not really sure what exactly you mean by potato taste and smell. You could reduce the amount of potato or use tahini sauce to balance the flavour.

    Assalamu Alaikum sis. We can store the extra garlic sauce in freezer for about 4weeks, right? I stored them in freezer and used after 2 days but the texture was not a smooth sauce, like on the day I made it, it was like a paste-like texture, it was crumbling into pieces when I applied on the shawarma… Is it normal? Is it ok if I use it anyway?

    1. W/Salaam, yes it is fine but
      W/Salaam, yes it is fine but to make it smooth again, just add a bit of warm milk or water and blitz for a few seconds in the blender. It will be back to normal.

    1. It may change the flavour of
      It may change the flavour of this dish as it is supposed to be a savoury dip not a sweet one. You could try though. Otherwise use sour cream instead.

    1/4 cup mayonnaise
    2 tbsp yoghurt
    1/4 tsp garlic paste
    A dash of pepper
    A dash of salt (if needed)

    Combine! 🙂
