Ingredients for Chicken Marinade
- 500 gm boneless chicken breast, cut into small cubes
- 2 tsp. corn flour
- 1 tsp. salt
- 1 egg, lightly beaten
- 1/2 tsp. black pepper powder
- 1 tsp. ginger paste
- 1 tsp. garlic paste
Other Ingredients
- 4 tbsp. oil
- 1/2 tsp. cumin seeds
- 1 tsp. ginger paste
- 1/2 tsp. garlic paste
- 1/2 tsp. black pepper powder
- 1/2 tsp. cumin powder
- salt to taste
- 1 tsp. chilli powder
- 2 tbsp. chilli garlic sauce
- 2 tbsp. freshly chopped mint
- 4 tbsp. freshly chopped coriander leaves
- 3 green chillies, chopped (adjust to taste)
- a few curry leaves
- 1 tsp. garam masala
- 4 tbsp. water
- few drops red food color (optional)
- 1/4 cup thick plain yoghurt (whipped)
- sliced onions for garnish (optional)
Instructions
Marinate the chicken cubes in the marinade ingredients for at least 4 hours or up to overnight.
Heat oil for deep frying in a deep pan. Lower the flame, and add in the chicken pieces slowly. (Do not over crowd the pan). Fry for not more than 3 minutes. Do not over-fry, it will result in hard chicken. Remove and set aside to drain on kitchen towels.
Take another pan, add oil. Add cumin seeds and let them splutter. Add in ginger, garlic, green chilies, curry leaves and fry for a minute. Next add black pepper powder, cumin powder, chili powder, and salt to taste. Then add chili garlic paste, chopped mint, chopped coriander leaves, garam masala and fry for about 1-2 minutes on medium flame.
Add little water (a few tbsps.) and cook for a minute on medium flame. Add red food color, mix well and throw in the fried chicken pieces. Mix them well so that the spices coat nicely. Add yoghurt and mix well to coat the chicken. Increase the flame to high and cook till the yoghurt is absorbed fully. Taste and adjust salt/spices. Turn off the heat.
You can garnish with sliced onions, salad etc. and serve hot. Goes well as a side dish for fried rice, fries etc.

Can this dish be made a day in advance? If yes, then what is the best way to reheat it? If not, then at least can the chicken be fried a day in advance?

Yes you can make this a day ahead. Most of my curries and bbqs can be made a day or more ahead. 🙂

Salam. Can we prepare this few hours earlier n re-heat on the gas just before serving? I could not find curry leaves any replacement for that?

W/Salaam, yes you can prepare this ahead and then reheat. I don’t think anything can substitute the curry leaves in this recipe but you can just leave them out if you cannot find them.

Assalamun Aleykum. I made this yesterday and it turned out very nice, very very pleased with the taste, though the yoghurt reduced the red color, which i need to be careful next time, In Shaa Alla. Jazakallah for all the yummy recipes. I wanted to ask if I can fry the chicken a day or night before, and finish the rest the next day. (this will help especially when I’m making more than double qty as above).

Can i use coriander powder instead of coriander leaves
No, for this you will need the fresh coriander, you can omit it if you do not have but do not substitute with the powder as they have very different flavours.
