Servings : two 8" cakes or 24 cupcakes
This lovely cake is most delicious, but more than that, it is one of the easiest cakes to prepare!
Ingredients for Cake
- 2 cups all-purpose flour
- 2 cups sugar
- 3/4 cup unsweetened cocoa powder
- 1 tsp. baking powder
- 2 tsp. baking soda
- pinch of salt
- 1 cup milk
- 1/2 cup vegetable oil (or melted butter)
- 1 tsp. pure vanilla extract or essence
- 1 cup HOT brewed coffee (1 tsp. of instant coffee mixed in a 1 cup of hot water)
- 2 eggs
Ingredients for Ganache
- 8 oz. semi-sweet chocolate, cut into small pieces (227gm)
- 3/4 cup whipping cream (180ml)
- 1 tbsp. unsalted butter (15gm)
Instructions
Preheat oven to 175 degrees Centigrade and grease and flour two 8 inch cake pan. In a bowl, mix together all the dry ingredients.
Create a well in the center and add all the rest of the ingredients except coffee. Mix well until combined and then add the hot coffee. Mix once again.
Pour into greased pans and bake in the middle rack in the oven for approximately 45 minutes or until a skewer comes out just clean. Cool on a wire rack.
Slice each cake into two slices, then layer using buttercream frosting, and cover the cake with melted chocolate or ganache. I sprinkled crushed pistachios and almonds on top. For the frosting used in the layers, I used THIS buttercream frosting with some cocoa added into it.
For the Ganache
Place the chopped chocolate in a heatproof bowl. Set aside. Heat the cream and butter in a medium sized saucepan over medium heat. Bring just to a boil. Immediately pour the boiling cream over the chocolate and allow to stand for 5 minutes. Stir until smooth, then just pour or drizzle it over the cake and let it fall on its own down the sides of the cake.

Can I use the baking powder only because Im afraid I wont be able to find the Baking soda in local markets. Would you tell me the quantity of Baking powder if I use only this? Thank you again 😀
Unfortunately you will need both the ingredients for this recipe. Baking soda (bicarbonate of soda) is very easily available in most shops n supermarkets. 🙂
Salaam can you pls tel me which vanilla essence or extract to use. Most of them have alcohol in it.
W/Salaam, halal versions are available online or in asian/muslim shops worldwide. Brands will depend on which country you are located.

I hear ASDA (sp?) stocks halal vanilla essence. Always go for essence as extract almost always WILL contain alcohol. Also check the small muslim-run grocers, you won’t miss it. Otherwise if you have relatives in Dxb or any other muslim country, you can get them to send you halal vanilla powder or essence.

Hi, i want to ask afetr adding coffee to mixture, mixture is so runny..is it ok?
2. 2tsp od soda is fine as i m afraid of using 2tsp soda.
3. some times it does happen to me that when i insert a knife , it comes out clean but after taking out cake from oven, texture is some what rubber type, it is not completely baked but knife comes out clean..what to do? kindly reply.
Hi, yes it will be runny that is fine. Follow the ingredients amounts exactly for best results. Just make sure that you preheat the oven, bake for the recommended time and use FRESH and NEW ingredients especially of the baking soda.
hi fauzia.. i m just out of the kitchen..tried the cake… and it was a mess:( i have microwave oven..the last time i tried choc brownie at simple cook for 4mins it was wonderful…. bt this cake was half uncooked at the bottom…my ingried wr halved and i cooked it at four mins…thena gain for two mins more…total six bt it was still uncooked and the taste is also not gd…plzz help..

W/Salaam, yes you can make this into cupcakes and any frosting will work just fine. I would not use caramel frosting for these, the cupcakes will end up being overly sweet.
Salam. U r a great cook! Wanted to ask if this recipe will work for stove top baking? (Since I don’t have an oven). Or which other chocolate cake recipe will work for stove top baking? Also I don’t have baking soda at home. Just have baking powder. Are both the same thing? Can I substitute powder for soda?
W/Salaam, thank you. Yes it should be fine for stove top baking, or otherwise go for the basic chocolate cake recipe also in this folder. Typically you cannot replace baking soda with baking powder as baking soda and baking powder work differently. Baking soda is a pure base, while baking powder is a combination of base and dry acid. The other (basic cake) recipe doesn’t require baking soda, so maybe it would be best if you go with that one.

i believe its baking soda..it smells weird and tastes weird too after a while in mouth..:(
Yes it would most probably be your baking soda. How fresh was it? If old baking soda is used, that would happen with any recipe. Please make sure to use fresh baking soda always for best results. There actually should be no smell or weird taste at all in the cake.

Same temp, but bake them for just 15 minutes or until a toothpick inserted into one of them comes out clean.
