Servings : two 8" cakes or 24 cupcakes
This lovely cake is most delicious, but more than that, it is one of the easiest cakes to prepare!
Ingredients for Cake
- 2 cups all-purpose flour
- 2 cups sugar
- 3/4 cup unsweetened cocoa powder
- 1 tsp. baking powder
- 2 tsp. baking soda
- pinch of salt
- 1 cup milk
- 1/2 cup vegetable oil (or melted butter)
- 1 tsp. pure vanilla extract or essence
- 1 cup HOT brewed coffee (1 tsp. of instant coffee mixed in a 1 cup of hot water)
- 2 eggs
Ingredients for Ganache
- 8 oz. semi-sweet chocolate, cut into small pieces (227gm)
- 3/4 cup whipping cream (180ml)
- 1 tbsp. unsalted butter (15gm)
Instructions
Preheat oven to 175 degrees Centigrade and grease and flour two 8 inch cake pan. In a bowl, mix together all the dry ingredients.
Create a well in the center and add all the rest of the ingredients except coffee. Mix well until combined and then add the hot coffee. Mix once again.
Pour into greased pans and bake in the middle rack in the oven for approximately 45 minutes or until a skewer comes out just clean. Cool on a wire rack.
Slice each cake into two slices, then layer using buttercream frosting, and cover the cake with melted chocolate or ganache. I sprinkled crushed pistachios and almonds on top. For the frosting used in the layers, I used THIS buttercream frosting with some cocoa added into it.
For the Ganache
Place the chopped chocolate in a heatproof bowl. Set aside. Heat the cream and butter in a medium sized saucepan over medium heat. Bring just to a boil. Immediately pour the boiling cream over the chocolate and allow to stand for 5 minutes. Stir until smooth, then just pour or drizzle it over the cake and let it fall on its own down the sides of the cake.

The recipe makes either one large cake, or two 8″ cakes. So yes, you can slice each cake to make two slices. Or if you are just making one large cake, slice it in two as well, or more if you can.
Use about 50 gm of cocoa powder. That would be half the amount mentioned in the recipe. 🙂

W/Salaam, LIQUID milk, and all the ingredients are added into the flour together and mixed, coffee last. Just as described in the recipe instructions.
can i reduce the quantity of baking soda i dont like its smell in da cake can i take 2 tbsp of baking powder instead of soda ?

I made this today. should the cake batter be so watery, thin though? half the cake fell apart so I couldn’t cut it in half 🙁 tasted okay-ish though. Just dont know where I went wrong.
W/Salaam, yes the batter should be thin. Did you grease and line your cake pan?
For this recipe the baking soda is important. And it shouldn’t have a smell unless the baking soda is old, try using a fresh pack or change the brand to a different one and see if that helps. 🙂
ok i will try buying a new one thanx which brand u use ? and i want to knw how to use whip cream i mean i ve seen the brand named betty crocker in karachi with different flavor . i dont knw how to use it , do i need to beat it? if yes for how many min? or its already beaten can i put it directly in the pipen bag and use it on cake?
Oh I keep changing brands of baking soda, since am not from Karachi it would be hard to give you a local brand. Best to ask at the supermarket which is the best one they have. As for the betty crocker tubs you may be seeing, make sure it is whipping cream and not frosting, those are two completely different things. Whipping creams would be in the refrigerated isles, it comes in liquid form and then whipped or used as is like in this recipe to make ganache. Please check my whipped cream recipe also in this cake folder for the whipped version.

Simply mix it or whip it slightly then use on your cake.

hi i want to make this cake but in white chocolate so for the buttercream i wont add any cocoa powder and for the ganache i am going to use white chocolate instead of dark chocolate but how should i make the cake so its not chocolate cake?
Hi, you can make white buttercream and ganache, but the cake recipe cannot be altered to make it plain with the same results. You can either go for it as it is (chocolate cake with white frosting/ganache) or use my vanilla cake recipe for the cake if you want it white. 🙂
hi fauzia…while mixing the dry ingridients u have mentioned 1 cup milk too..shud i mix that too with dry ingridients…coz u havent mention milk in process of baking u just mentioned it in ingridients…or simply tell me when to use that 1 cup of milk

I regularly use yours recipes besides the differences of your ingredients and those we find here in france. I made this cake today but the mixture had lumps in it is this normal and once it had been baked the cake had formed a hard crust. Do u have any suggestions as what could have caused this. JFK
