Servings : two 8" cakes or 24 cupcakes
This lovely cake is most delicious, but more than that, it is one of the easiest cakes to prepare!
Ingredients for Cake
- 2 cups all-purpose flour
- 2 cups sugar
- 3/4 cup unsweetened cocoa powder
- 1 tsp. baking powder
- 2 tsp. baking soda
- pinch of salt
- 1 cup milk
- 1/2 cup vegetable oil (or melted butter)
- 1 tsp. pure vanilla extract or essence
- 1 cup HOT brewed coffee (1 tsp. of instant coffee mixed in a 1 cup of hot water)
- 2 eggs
Ingredients for Ganache
- 8 oz. semi-sweet chocolate, cut into small pieces (227gm)
- 3/4 cup whipping cream (180ml)
- 1 tbsp. unsalted butter (15gm)
Instructions
Preheat oven to 175 degrees Centigrade and grease and flour two 8 inch cake pan. In a bowl, mix together all the dry ingredients.
Create a well in the center and add all the rest of the ingredients except coffee. Mix well until combined and then add the hot coffee. Mix once again.
Pour into greased pans and bake in the middle rack in the oven for approximately 45 minutes or until a skewer comes out just clean. Cool on a wire rack.
Slice each cake into two slices, then layer using buttercream frosting, and cover the cake with melted chocolate or ganache. I sprinkled crushed pistachios and almonds on top. For the frosting used in the layers, I used THIS buttercream frosting with some cocoa added into it.
For the Ganache
Place the chopped chocolate in a heatproof bowl. Set aside. Heat the cream and butter in a medium sized saucepan over medium heat. Bring just to a boil. Immediately pour the boiling cream over the chocolate and allow to stand for 5 minutes. Stir until smooth, then just pour or drizzle it over the cake and let it fall on its own down the sides of the cake.

Can I skip cocoa powder to avoid brown color?
For this recipe you need the cocoa.
Assalamu Aleikum Sister.. May I know why you do not use butter in this recipe? does the vegetable oil replace butter? And when mixing the ingredients should i use an electric hand mixer or can it simply be done with the spoon?
W/Salaam, yes the oil is in place of butter. And simply mix with a spoon, no mixer needed. 🙂

W/Salaam, thank you! I have a pineapple upside down cake, but am guessing the cold cake you mean is more of a cream cake? If so, use my strawberry & cream sponge cake recipe, just substitute the strawberries with pineapple chunks. 🙂
z it ok to use both baking soda n baking powder together? can i skip veg.oil?
Yes it is ok to use both. As for the oil, if you skip it you will need to use melted butter in it’s place. It is a crucial ingredient. 🙂

Not sure what american flour means. All purpose flour is the normal/plain flour.

Divide all the ingredients in HALF to make one 8 inch cake.

W/Salaam, you can but the consistency will be thinner than with whipping cream.

W/Salaam, all purpose flour is the same as plain flour. Self rising flour is plain flour that has baking powder added into it.

Hi Fauzia, i tried making the cake with half the quantity of ingreidents and the cake was baking well however the sides were cookd and the middle portion remained moist still after 45 min so i cooked it further due to which the side portion ended up becoming little harder than softer and the ganache has not been abosrbed by the cake like the one displayed in the pic above. Kindly advise what could be the reason for the same as i need to bake the cake for my hubbys birtheday which in after 2 weeks…
Hi! Did you preheat the oven before baking? And is the heat in your oven evenly distributed or is it only from top or bottom? Also did you place the cake in the middle rack of the oven?

Yes melt the butter. Two eight inch cakes.
Can i use cooking chocolate instead of cocoa powder..? If yes, how much..?
Best to use cocoa powder for this recipe.
