Cucumber & Tomato Sandwiches

Servings : Makes 2-4 Sandwiches

This is a sandwich I have at least a couple times a week for my lunch! It’s quick, easy and light. Of course, one can add stuff in there like slices of boiled egg or cheese etc…but the sandwich tastes awesome even with just the basic tomato and cucumber slices!

Ingredients

  • 1 cucumber, sliced
  • 1 tomato, sliced
  • salt/pepper
  • 4 white bread slices (or bread of choice)
  • butter or mayonnaise

Instructions

Spread a thin layer of butter or mayo on the bread slices. This helps seal the bread to ensure no moisture from the cucumber or tomatoes seeps into it. Add the cucumber and tomato slices to cover the slice of bread, sprinkle some salt and pepper, add the top slice. Then trim off the edges/crust and cut the sandwiches diagonally to form 2 triangles.

I prefer using day-old bread for these so that the bread doesn’t feel too doughy when biting into it. These are also best served immediately or within a short while of making.
