Cucumber Sandwiches

Servings : Makes 2-4 Sandwiches

Quick, easy to make, light and healthy…these are perfect for when you want something light to eat or for an evening snack-sandwich.

Ingredients

  • 1 big cucumber, peeled and grated or sliced thinly
  • salt and pepper
  • 4 white bread slices (or bread of choice)
  • butter or mayonnaise

Instructions

Squeeze out any excess water from the grated/sliced cucumber. This helps keep the sandwiches firm otherwise the cucumber will release water and make your sandwiches soggy.

Spread a thin layer of butter or mayo on the bread slices. This helps seal the bread to ensure no moisture from the cucumber filling seeps into it. Add the cucumber, sprinkle some salt and pepper, add the top slice. Then trim off the edges/crust and either cut the sandwiches diagonally to form 2 triangles or down the center to form rectangles.

I prefer using day-old bread for these so that the bread doesn’t feel too doughy when biting into it. These are also best served immediately or within a short while of making.
