Lime Granita

We love having this slushy icy refreshing granita, especially when the weather is warm and you feel listless and tired, it really perks you right up! Ramadhan is a time when we MUST have this late at night as a refresher. 🙂
Servings 6 people

Ingredients
  

  • 5 cups water
  • 2 cups sugar
  • 1/4 cup to 1/3 cup lime juice freshly squeezed and sieved
  • pinch of salt
  • green colour you can make it any colour you want actually

Instructions
 

  • Mix the sugar, salt and water in a pan and bring it to a boil. Give it about 4-5 minutes from the point when it starts boiling, then switch off. Let this syrup cool down, then add your freshly squeezed lime juice and a few drops of colour. Mix together well, then pour it into a dish or some form of tray. Cover and freeze it.
  • If you want it in chunks or cubes, allow it to set completely (overnight) and then cut it up into sections and serve. If you prefer it to have a slushy texture, remove the dish just as the ice begins to set and, using a fork, scrape everything until it looks like crumbs, then cover and put the dish back. Again a couple hours or so later, remove the dish and scrape it up once more and cover and return it back into the freezer. This process gives your granita that lovely slushy icy crumbly look and texture.
  • Whenever you’re ready to have it, scrape it up quickly again using a fork, then serve and garnish with mint or lime slices or even lime rind.
  • I sometimes even make shaped ice-cubes out of the same liquid to garnish with, as seen in the pic.

      Hi! Limes are a bit more intense in flavour, more tart. Lemons are slightly milder but larger in size.
