Herb & Garlic Cheesy Pizza-Bread

The PERFECT accompaniment to pizzas or steaks…in place of garlic bread or rolls. A lovely light bread, topped with garlic, herbs, spices and some cheese. YUM! ♥
Servings 4 people

Ingredients

  • 2 1/2 cups all-purpose/plain flour
  • 1 1/2 tsp salt
  • 5 tbsp oil
  • 1 1/2 tsp sugar
  • 1 1/2 tsp instant yeast use 2 tsp. for colder climates
  • 2 pinches baking powder
  • warm milk mixed with a bit of water for kneading

Extra Ingredients

  • 2 tbsp softened butter
  • 1-2 tsp garlic paste
  • 1 tbsp very finely chopped coriander
  • 1/4 tsp black pepper powder
  • pinch of salt
  • 1 tsp chilli flakes or oregano optional
  • 1/2 cup mozzarella and/or cheddar cheese

Instructions

  • Mix all the dry Pizza Dough ingredients and the oil, then slowly start adding the warm milk a little at a time. Get it to a soft dough, the softer the better, knead it very well for at least 8 minutes or more if possible.
Dab a touch of oil all over the dough, then cover it and place it somewhere warm. Leave it to rise to double its size, takes about 30 minutes to an hour depending on the weather.
Once risen, punch it down, give it a quick knead and then roll it out to about 10-12 inches diameter and place on your greased pizza pan/tray. Again cover the tray with a light cloth/towel and let the base rest/rise slightly for about 15-20 minutes.
In the meantime, mix the butter with the garlic, chopped coriander, black pepper and pinch of salt.
Once pizza has rested, take a knife and make small cuts all over it to make sure it doesn't over-swell during baking. Then brush the garlic butter all over the pizza.
Next, sprinkle some paprika powder, oregano, red chilli flakes all over the surface. You can even add some chopped green chilli for that extra kick of spice!
Grate about half a cup of mozzarella cheese and sprinkle it over the pizza.
Bake in a pre-heated oven at 180 C for about 15-20 minutes or until cheese has melted and pizza is nice and golden. Slice and serve!!
    Enjoy!

W/Salaam, sorry that was a mistake which I have edited. The cheese is sprinkled last on top of the pizza before baking, thanks for bringing that to my attention. 🙂
