Fish Fingers & Baked French Fries
Fish is one of the healthiest 'meat' options, and it's good to have a variety of ways of preparing it that will appeal to the appetites of your loved ones. Here's an easy home-made fish fingers recipe that tastes incredible!
Servings 3 people
Ingredients
Ingredients
- 250 gm fish fillet cut into thick strips/fingers (marinate the fish pieces for at least an hour in a quarter tsp each of salt, chilli powder, garlic paste, black pepper and turmeric and the juice of half a lemon)
- 1 egg
- 4-5 tbsp cooking cream
- 1 cup breadcrumbs
- 1/4 cup all-purpose/plain flour
- salt/pepper
- 3 tbsp chopped coriander leaves
- 2 tbsp finely grated mozzarella cheese
- oil for frying
Ingredients for Baked Fries
- 4-6 potatoes
- 1 tbsp oil
- 1/2 tsp salt
- 1/4 tsp black pepper powder
- 1/2 tsp red chilli powder
- a pinch of garlic powder
- a pinch of cumin powder
- a pinch of turmeric powder
- any other spices/herbs of your preference
Instructions
- Take 3 plates, add the flour into the first, beat the egg with the cream in the second, and put the breadcrumbs into the third.Add salt, pepper, chopped coriander and grated mozzarella cheese into the breadcrumbs and mix together. If possible, transfer the fish fillets into the freezer for about 15 minutes before preparing them for frying. The colder the fillets, the firmer they get, thereby giving better results. Dip one fillet piece at a time first into the flour, then into the egg/cream mixture (use a spoon or fork to turn the pieces in the egg/cream for easier handling) and finally roll in the breadcrumbs. Once all are done, heat some oil in a pan and fry on medium heat until both sides are golden brown.
- Remove onto some kitchen towels to absorb excess oil. Serve with fries and lemon wedges or a dip of your choice.Baked FriesPeel and cut potatoes into strips. Wash and put them in a pan. Cover with water, and bring to a boil for about 2-3 minutes. Drain and blot, then drizzle the oil and sprinkle whatever spices you want plus salt. Toss all together until the oil coats the fries, then spread them out on a lightly greased baking tray. Bake at 180 C for about 15-20 minutes or until fries are crisp on the outside and soft and fluffy inside. Serve hot for best results. Enjoy! 🙂
Notes
You will know that the fish is ready when it flakes easily when you cut it open with a fork. Fish gets done very quickly so be careful not to over-cook it as it will dry out if you do.
