Egg in a Basket
It’s called this because it’s basically an egg, in a bread basket lol. This is one of my favourite quick-fix breakfast dish. Truth be told, I sometimes love having this for my dinner, when am not hungry enough for a proper meal.

Ingredients
- 1 egg
- 1 slice of bread
- butter
- salt and pepper
Instructions
- First, use a cookie cutter or even a small glass to cut out a circle from your slice. Then heat a blob of butter on a frying pan, when it’s warmed up, place your slice of bread and let it toast slightly for half a minute.Add a tiny pat of butter into the hole where the egg will go. Now break open the egg in a small bowl, and gently ease it into that hole. Do not move the slice around at this point or you will have egg spilling all around underneath the slice and it will ruin the effect. Once the bottom of the slice is nice and solid, you can ease a spatula gently under it and turn it over so that the other side might be done. You can add a touch of butter so the new side gets equally golden.Depending on how ‘done’ you like your egg, remove the slice from the pan at the point which you prefer. I like mine over-easy, so that takes a couple of minutes. You can cook the cut-out circle on the same pan on one side, becomes yummy and crispy. If you like more bread with your egg, you can cook an extra slice without the egg and serve one on top of the other!Enjoy! 🙂

W/Salaam, am good thanks. You can use any of the bread recipes on the website and just substitute the plain flour for whole-wheat. 🙂
