Delicious Banana Bread

A soft, moist and flavourful cake that is incredibly easy to prepare. For a chocolate version, click HERE.
Servings 1 Loaf Pan

Ingredients
  

  • 1 1/2 cup all-purpose flour
  • 3-4 ripe bananas
  • 1/3 cup melted butter
  • 1 cup sugar can reduce to 3/4 cup for a slightly less sweet bread
  • 1 egg lightly beaten
  • 1 tsp. vanilla essence
  • 1 tsp. baking soda
  • pinch of salt

Instructions
 

  • Pre-heat oven to 175 C.
    Using a wooden spoon, mix melted butter into the mashed bananas in a large mixing bowl. Mix in sugar, egg and vanilla. Sprinkle baking soda and salt over the mixture and stir them in. Add flour last and mix until JUST incorporated. Do not over-mix.
    Pour into buttered pan and bake for about 1 hour or until a toothpick inserted in the middle comes out clean.

    1. Hi, thank you! No the two cannot be interchanged. Maybe you know baking soda as bicarbonate of soda? Or mithi soda? It should be easily available.

  3. Salam fauzia, i followed the instructions but my bread was no way near as nice as yours…I baked for 1 hour and it turned black from outside and inside..Looked horrible but tasted okay..i dont know what went wrong 🙁

    1. W/Salaam, that is strange, it’s never happened to me or anyone who’s sent in their tried and tested pics on FB. Hmm. Did you set the temperature to the right mark? And was the cake on the middle rack of the oven?

  4. Hello, please tell me is all purpose flour plain flour? Was i supposed to use self raising flour as my cake did not rise a lot. Thanks.

  5. Yes AP flour is plain flour and no there was no need for SR flour. Did you use the baking soda as directed in the recipe? And was it a fresh batch?

    1. Thanks. Yes, I did use baking soda or as we call it bicarbonate of soda, and no it wasn’t a fresh batch. Will buy fresh and try again. It tasted very nice though. This is definitely a favourite for us.

  11. Assalamualaikum.This my 3rd recipe tried from ur site which turned out well.Alhamdhulillah.I prepared this using stove top method.The tastes was highly appreciatable.but it turned a bit black at the bottom 🙁
    Can i make all cakes which u have given in pressure cooker method?if yes,was there any changes in timing/measurement??Wanna make pineapple cake:-)

    1. W/Salaam, thank you for the lovely feedback. Try to make sure the bottom heat is not too high to prevent blackening from the bottom. And yes you can use the pressure cooker method for this. No need to change any of the ingredients.

    1. W/Salaam, I personally never bake or cook in the microwave, not good for the health. So cannot be sure on the specifics of how to make this in the micro, sorry!

      W/Salaam, yes you can…about half a cup of crushed or chopped walnuts will be good. Toss them in a dusting of flour before folding them into the batter so they do not sink to the bottom of the cake. 🙂

    Asalaamalikum Fauzia, just out of curiosity I was wondering why this recipe calls for Baking Soda and not Baking Powder? I was looking at Banana Bread recipes on other sites and they too call for Baking Soda and not Baking Powder.. so just thought Id ask you about it.. Jazakallah Khair.

      W/Salaam, I really don’t know why exactly but baking soda works better for denser cakes like this one. 🙂

    dont u think 1 hour baking time is too much .. mine is in oven and it seems almostne in just 30 min 🙁

    1. It is not too long if you use
      It is not too long if you use the loaf pan. If you use a different shape of pan the time will change.

    Is the one in your display pic made in a loaf pan or an 8 x 8 pan? I am assuming the loaf pan takes an hour?

    1. Did you bake immediately
      Did you bake immediately after mashing the bananas and using them in the batter? When bananas sit for long once they are peeled, they will change colour. You need to be fast and bake the loaf right away.

    2. Can i replace white sugat with brown sugar? How many gms of butter i shal melt to get 1/3rd cup of melted butter

      W/Salaam, thanks. Sorry to know about the mistake with the cake! Do this, slice it up and place the slices on a tray then bake it until it’s fully done. It will not really be a soft spongey cake as it should be but at least you will have some nice toasted slices of banana bread to have with a cup of tea. 🙂

    Thank you for this recipe. I have tried baking it in loaf pan and works very nicely and takes around 45 mins. If I use cupcake tray..what should be the baking time approximately? Around 20 minutes you think??

      Hi, thank you! There are many reasons why a cake would sink in the middle, pls have a look through my tips section for the note titled cake mistakes..find out why. I would not recommend using apples in place of bananas for this recipe as the two fruits have very different consistencies.

      Hi, I actually have never measured the amount in a cup but I use medium sized bananas. If you are using large ones, you can use just 2.

    1. Hi, parchment paper is just
      Hi, parchment paper is just the same thing as butter paper. Lining the cake pan with it will help prevent the cake from sticking to the bottom of the pan but it does nothing for burning. That means that maybe your oven runs too hot from the bottom.

    1. Yes you can, just double all
      Yes you can, just double all the ingredients. However split the batter in half and bake in two loaf pans to ensure they are cooked through as a larger loaf might not bake as well.

    I like really like your page. Masha’Allah it’s a great thing that you’re doing. I just had this doubt could you please help me I really want to try this banana bread but I can I use baking powder instead of baking soda can you give me the correct measurements please?

    1. W/Salaam, thank you. For this recipe the baking soda is important and it cannot be substituted with baking powder as they both have different functions in a recipe.
