- 1 1/2 cup all-purpose flour
- 3-4 ripe bananas
- 1/3 cup melted butter
- 1 cup sugar can reduce to 3/4 cup for a slightly less sweet bread
- 1 egg lightly beaten
- 1 tsp. vanilla essence
- 1 tsp. baking soda
- pinch of salt
Pre-heat oven to 175 C.Using a wooden spoon, mix melted butter into the mashed bananas in a large mixing bowl. Mix in sugar, egg and vanilla. Sprinkle baking soda and salt over the mixture and stir them in. Add flour last and mix until JUST incorporated. Do not over-mix.Pour into buttered pan and bake for about 1 hour or until a toothpick inserted in the middle comes out clean.Enjoy!
