Cake Rusks

A wonderful biscotti made out of strips of cake that are baked until golden and crispy! These taste oh-soooo-delicious with tea or coffee. Dunking goodness, YUM!
Servings 4 Dozen

Ingredients
  

  • 1 cup all-purpose flour 120gm
  • 1 tsp. baking powder
  • pinch of salt
  • 1/2 cup butter or margarine at room temperature (113gm)
  • 3 eggs at room temperature
  • 3/4 cup finely grinded or caster sugar 150gm
  • 1 tsp. vanilla essence
  • a few drops of yellow color

Instructions
 

  • Sift the flour with the baking powder and salt, then set it aside.
    Beat the butter/margarine with the caster sugar until fluffy and pale in color. Add the color and mix well. Add the eggs one at a time, beating well after each addition. Then add in the flour, mixing only until just combined. Finally fold in the vanilla essence.
    Pour the batter (it will be a thick batter) into a greased and lined 7×11 pan. (You can use any pan you like, but I chose to use a big pan so as to get a thin layer cake, that way the strips are nice and evenly baked).
    Bake in a preheated oven at 180 C for 15-20 minutes, or until a toothpick comes out clean.
    Turn the cake out and let it cool. Then, using a sharp knife, cut it down the middle, then into thin strips.
    Place the strips on a baking sheet, and put the sheet back into the oven. Bake at 150 C for 15 minutes. Turn them over and bake the other side for another 15 minutes. If they need more time in the oven, turn down the heat a little bit and let them bake for slightly longer until they are golden brown and crisp on all sides.
    Remove on to a wire-rack and let them cool. Store in an airtight container.

Notes

If they still don’t feel as crispy as you would want, AFTER they have cooled completely, turn the oven on and let it heat to 180 C. Then turn it off and put the rusks on a baking sheet and put it back into the oven. Close the oven door and let them stay in there for about half an hour with the oven off.

    1. W/Salaam, yes you can use cake rusks, sponge cake or even sugared biscuits. Have you tried checking for them at the supermarkets?

    i made ur chocolate brownies n they came out truly delicious..but d plain vanilla cake didn’t turn out tht well. I wanted 2 try out these cake rusks 2day but can i substitute eggs wid yogurt in dis recipe n how much n also oil 4 butter?plz rply asap.thnx

    1. W/Salaam, thanks for the feedback. What went wrong with the vanilla cake? Did you make any changes to the recipe? I have not tried substituting the eggs in this recipe so not sure how the results will turn out like.

  5. Salam fauxia I made honeycomb bread it was great my family like it so much for cake rusks can I use normal sugar cos I can’t find the caster sugar

    1. W/Salaam, normally a cup of SR flour has a tsp and a half of baking powder. That would be a bit more than what is needed for this recipe as we use just 1 tsp per cup of flour.

    1. W/Salaam, best to follow the exact measurements as I cannot be sure what size your teacup is or how much in grams it can hold.

    1. gm and ml are different units of measurements, gm is for dry ingredients and ml is for liquids. Best to get a scale or a measuring cup for dry ingredients.

    1. You can, although cannot be sure on how the results will be as sponge cakes mostly do not use any oil/butter.

  7. Salam fouzia h r u. I make cake rusk today and still thy r inn hot and off ovren .but they r not chang the size I used meanz phooly nahi. And still they r cake not rusk I do all ur tips but not crispy. The tast r v good same like bakrey shop. So pleaz upload the step by step picture. Its reall easy for us .

      W/Salaam. Sounds like your oven runs on degrees Fahrenheit, not Centigrade. Could you confirm this first please?

      In north america oven temperatures are not as same as in back home Asia. so please convert all the temperatures for baking. 180 means you have to put 350 or 355 whereas 200 means you have to use 390 to 400 for baking. 500 is the temperture you will use to brown things especially if you use the top grill. i hope this helps you and nothing stops you from baking Fauzia’s incredible dishes.     Assalamualikum Fauzia, I didn’t get one thing that 1 cup (120 gm) is almost equal to 1/2 cup (113 gm) and less than 3/4 cup (150 gm).

    1. Different things weigh
      Different things weigh differently. A cup of stones would weigh more than a cup of feathers, right? Same theory here. Some ingredients are light so a cup of those is lighter. Some are heavy so they weigh more.

  14. Assalam tried this recipe
    Assalam tried this recipe yesterday. But it did not get cooked in 15 mins. Had to bske it for around an additional 40 mins. I put it in an aluminium recipient which i normally used for baking cakes. I am surprised how the cake did not turn out well. I had all fresh ingredients in the cake even the baking powder was just bought. Grateful if you can think abt wat went wrong.

  15. I pre-heated the oven at 180C
    I pre-heated the oven at 180C for 15 mins. The recipient I used is a thick aluminium one in which tice can be cooked. I do not have the exact measurements but is quite thick and i normaly use it to bake other cakes. There was also enough space (nearly 1/2 of the space of recipient in terms of length)when the batter was dropped in that recipient.

    Can u tell me the perfect size of cake pan which I can use.

      Hi, you could try slicing them thinner, although really these are a soft kind of biscotti. Sort of a middle between cookie and cake. 🙂

    Made the cake rusk using your step by step method and they turned out so very nice. Although baked for 5 minutes more to get the required crispness. My husband loves cake rusk and we always buy it from the local super market, but he loved the one which I baked. Thank you so much for making my life easy .   18. Cake rusk turned out very
    Cake rusk turned out very crispy and tasty but after sometime when i placed them under fan or open at room temp they become less crispy
    Why it happened?

    1. As with all crispy baked
      As with all crispy baked goods, they need to be stored in an airtight container to retain crispness. You can bake them again on low heat for a few minutes to return them to a crispier state.
