Bhel Puri
Bhel Puri is a type of ‘chaat’ or savoury snack, and is one of the most popular Indian street foods. It is by far my absolute favourites amongst the chaats, combining a variety of textures and flavours. The delicious combination of crunchy puffed rice, sev, peanuts, tomato, potato and onion drizzled with some sweet-sour-spicy chutneys makes this snack a fantastic treat.

Ingredients
- 2 cups puffed rice
- 1/2 cup thin sev nylon sev
- 1/4 cup roasted or fried peanuts
- 4 puris roughly crushed (recipe link given in instructions below)
- 2-4 tbsp green chutney recipe link given in instructions below
- 2-4 tbsp tamarind sauce recipe link given in instructions below
- 1 small potato boiled, peeled and cubed
- 1 small red tomato finely chopped
- 1 small onion finely chopped
- 2 tbsp fresh coriander chopped
- lemon slices
Instructions
- Recipe for spicy puris HERERecipe for green chutney HERERecipe for tamarind chutney HERERoast the puffed rice in a pan with a pinch of salt over low heat for 3-4 minutes or until crispy. Pour it into a large bowl. Add the rest of the dry ingredients (crushed sev, crushed puris and peanuts). Next add the potato cubes, chopped onions and tomatoes. Give it a stir. Drizzle in the green chutney and the tamarind sauce. Sprinkle on the fresh coriander and a squeeze of lemon juice.Divide amongst serving bowls and serve immediately. Bear in mind that if this chaat sits for long with all the sauces it will end up getting soggy. So always be sure to combine all the ingredients right before serving to ensure it retains maximum crunchiness.Enjoy! 🙂
