Almond Cake

This is a fluffy, delicious and super-soft cake, the almond flakes sprinkled on the top, aside from enriching the appearance and flavour of the cake, give a bit of crunch and texture to every yummy bite, and also add lots of nutrients to the lovely cake.
Servings 1 8'' Cake

Ingredients
  

  • 1 1/2 cup self-rising flour 180gm
  • 1 1/2 tsp. vanilla essence
  • 2 large eggs use 3 if you have small eggs
  • 1/2 cup milk 100ml
  • 3/4 cup sugar 150gm
  • 1/2 cup butter/margarine 112gm
  • 3-4 tbsp. powdered almonds optional
  • 1/2 cup almond slices/falkes preferably with skin

Instructions
 

  • Grind the sugar to a powder and set aside.
    Sift the flour twice, then mix the powdered almonds into it.
    Grease and line an 8″ round pan and set aside. Preheat oven to 170 C.
    Beat the butter with the sugar until light and creamy. Then add the eggs one at a time, beating well after each addition.
    Now add a third of the flour and beat until combined, then add half the milk. Again beat the batter until milk is mixed in. Add another third of the flour, mix it in, and then add the remaining milk. Finally add the last of the flour and the vanilla essence. Beat just until everything is well combined.
    Pour into prepared pan and sprinkle the almond flakes all over the top, patting them down with your fingertips gently to help them stick. Bake for 25-30 minutes, or until a toothpick stuck in the center comes out clean.
    Remove from pan and let it cool completely before slicing. 🙂

Notes

Make sure all the ingredients are at room temperature for best results.

  4. Have tried some of the receipes and they turned out really well. But had one question. What does self rising flour exactly mean? Here we use ‘Maida’ to make cake. Is it different from self rising flour?

  9. Hi, if you have charcoal, you can light it and place it on the top cover of the cake so the heat generated from the top can brown the cake.

  13. assalamoualaikoum wrwb sister fauzia, hope i doing great… just baking zis almond cake wiz z exact way it is….i put it for 25 mins at 170 degrees celcius…i checked it…not ready yet…hav put it 4 further 10 mins…mek dua its gud….want 2 surprise my hubby after jum’ah..

    1. It is flour that has baking powder in it. You can make it at home by adding 1 and a half tsp baking powder and a pinch of salt to every cup of plain flour.

    I had done your carrot cake and it turned out very good even after using the measurement for the nuts for grams, i got a lot of compliments. Thanks for that.

    Also i make this cake everytime and everytime it turns out great. Now i am curious about making cupcakes and a bundt shaped cake.

    Could i use this recipe for cupcakes or is there a better one? also if i use a bundt cake shape is this recipe enough? to make a high enough cake. Cause usually it doesn’t become that high when i bake it in a normal round cakepan

    Also for the top i want to make a buttercream or whipped cream what would you suggest is easy. And if i choose whipped cream how can i make sure it doesn’t melt too fast.

    I have a silicon round 9 inch round pan which is about 2 n half inches deep, is it ok if i follow this recipe in this same pan.
    Also, i have a toaster oven and wenever i bake my cake the top layer doesnt take brown- is it ok if i move my cake on the top most rack during the last few minutes of baking, will opening the oven during baking make a difference?

      W/Salaam, yes the pan will be just fine, and yes you can move the cake to the topmost rack about 5 minutes before the cake is completely done. 🙂

    When i come out the cake i check it with the knife…its clean.
    What happens with my cake…plz guide me what’s i am doing wrong…
    Plz ans me soon…i want to try it for my birthday.
