Mini Party Sandwiches

Servings : Makes 12 mini sandwiches

An ideal way to serve up mini sandwiches, especially when you have a bit of a crowd to attend to. I love these as part of the food mix during family get togethers or parties. Kids especially love these. They taste something like tiny pizza sandwiches.

Ingredients

  • 1 packet sweet dinner rolls (you can use pav buns or scones)
  • pizza sauce (recipe link given in instructions below)
  • fillings of your choice (mince, chicken, veggies, etc)
  • shredded mozzarella and cheddar cheese, as needed
  • 1-2 tbsp melted butter
  • 2 pinches oregano (optional)
  • 2 pinches crushed black pepper (optional)

Instructions

First, prepare all your fillings and have them ready. I normally use my pizza sauce, some shredded chicken and thinly sliced onions/capsicum. Any filling you like will work here.

Line a baking dish or tray with foil making sure you have enough overhanging foil to also cover the top of the rolls. Place the dinner rolls on the tray and slice through them across the middle without separating the individual pieces. Lift away the top and set aside. Spread some pizza sauce and scatter your fillings plus the cheese. Cover with the top layer of the rolls and brush with melted butter. You can sprinkle on some oregano and pepper for added flavour. Cover the rolls with the overhanging foil to prevent the tops from burning in the oven and bake in a preheated oven at 180 C for about 20-25 minutes.

You can prepare and refrigerate the sandwiches a day ahead, then just bake before serving. This makes them the ideal make-ahead kind of dish.

Remove, uncover and serve on a tray. Using a sharp knife, cut through the individual portions for easy serving.
